Breakfast & Lunch and Day 13!

I had a lot of homemade bread leftover, and a new cheese to try, so you know what that means!  Apple Cheese Bread! When I went grocery shopping on Friday, they had a table by the deli with different lunch meats and cheeses.  Of course I was immediately drawn to the horseradish cheddar and it is AMAZING!  It’s Boars Head brand and if you can...

I hardly took any pictures!

I was so worried about my cooking timeline, with the lamb in the oven, the ham on the gas grill, that it wasn’t until I started to plate my food that I realized I hardly took any pictures!!  But here are a few that I did take! I was so tired this morning though!   I did half of the cleaning after dinner and ran a...

Happy Easter!!

Even though its a bit chilly outside, the sun is shining!  A good day for an Easter egg hunt (if we had little kids!).   I started with a simple breakfast casserole: 6 ounces stale white bread 2.5 cups egg beaters 1 package 50% reduced fat Jimmy Dean sausage, cooked 1 cup reduced fat cheddar cheese pinch of paprika salt and pepper to taste Combine all...

BSI – Coconut!

Marianne picked Coconut for this weeks BSI ingredient.  I can’t remember the last time I even used my coconut – so it was time I pulled it out! I tweaked an Eating Well muffin recipe for what I had on hand.  Cranberry Almond Coconut Muffins 1/4 cup unsweetened coconut 2 tablespoons all purpose flour 2 tablespoons plus 1/2 cup sugar free brown sugar 1 3/4...

Late night and sleeping in . . .

Hannah and I didn’t get home from my Mom’s house until almost 11:00 last night – we were so tired!  But we also had a lot of fun.  Whenever members of my family get together, we just laugh and laugh.  Tony doesn’t get the “unseen humor” most of the time!   They plan on going to Blue Man’s Group in Chicago this afternoon and then dinner...

Wendy’s for lunch . . . sort of!

Tony and I ran some errands earlier today, and since its no meat, we stopped at Wendy’s for a fish sandwich for him.  I have never had one in my life!  I might like it, without the tartar sauce, but since I wasn’t sure of the calories, I went with a plain baked potato.  I knew I had canned chili at home to make a filling...

It feels like Saturday!

Tony and I slept in this morning which was nice!  I did get up to give Hannah one last pep-talk on her drive.  She said she woke up at 6:30 and was a “nervous ball of energy.”  She said: “do you realize that this is the farthest I’ve ever driven by myself and the first time I’ve driven on the highway by myself!” She made...

Southwestern Quesadillas . . . and Chicken Pot Pie?

So when Tony heard of his dinner choices tonight, nothing was hitting home!  But once I wrote the southwestern quesadillas, and saw so many of you lean that way, I knew that was what I was going to make for myself – and a great use of leftovers! Southwestern Quesadillas (one serving) 4 corn tortillas 2 ounces flank steak 1 ounce Mexican cheese 2 tbsp....

Good thing. . .

my lunch is so late – after I put it into www.calorieking.com, it only comes in at 340 calories, 17 fat and 32 carbs! But I am happy my blood sugar was cooperating so I could do . . . LEVEL 2 of DAY 9 OF 30!   Yep, I did it, and was able to put a ninth consecutive sticker on my calendar!  Mind you,...

Happy Friday (for me!)

Yep, I have tomorrow off – three day weekend!  But its going to be busy!  I am having dinner at my Mom’s house tomorrow night because my Aunt and Cousin are in town from Virginia and Maryland.  Then Saturday I have “girls day out” with my twin sister and our friends who are twins.  THEN its Easter on Sunday with Tony’s family over at our house!...
