Asian-Marinated Flank Steak

I saw this in my Cooking Light magazine (March 2009)  and knew I had to give it a try.  To make life easier, I “accessorized” my dinner by stopping off at my local Chinese takeout for shrimp fried rice, green beans and peapods. Asian Marinated Flank Steak 3 tablespoons your favorite stir fry sauce 2 tablespoons water 2 tablespoons rice vinegar 1 tablespoon soy sauce...

Day 8 of 30 = DONE and Leftover Lunch

Yes, I was able to put my 8th sticker on my calendar for doing Day 8 of 30 of Shred!  Although my friend and I realized that we probably need to move to Level 2 already, considering we were able to talk to each other during the workout – but that just means we are getting stronger, right??!! 😀 Lunch was the second half of...

Craisin Scones

Stats:  Per scone: 372 calories, 15.25 fat, 54 carbs, 1 fiber, 5.3 protein The first scone I ever had was at Starbucks.  It was a cinnamon chip scone and it was love at first bite!  It was light and fluffy.  I tried to recreate the magic MANY years ago, but they always came out dense, more like hockey pucks! I...

Simple Dinner . . .

There are just some nights when I just want to put something quick together – that, and I forgot to marinate my flank steak for my Asian flank steak recipe!!  That will be tomorrow! I almost always have time to go on the computer in the morning before work, but today since I went to the gym, I didn’t have time.  Look what I found...

Day 7 of 30 Day Shred = Done!

I can’t believe we’ve made it 7 days in a row!  And you know what?  I can already feel a bit of a difference – the push ups aren’t as hard (even though I am still on my knees) and the cardio is getting a bit easier too. I may stick with level 1 advanced during the week and do level 2 on the weekends. ...

Who Went Spinning This Morning?

Yeah, that’s right – me!   I got up at 6:25, was out the door by 6:40 (after letting the dog out and saying goodbye to Hannah) and I got to the gym.  Now, this gym does not have spin classes, but they do have a spin bike.  I ended up alternating between 5 minutes of sprints to 5 minutes of hill climbs for 45 minutes!...

Snow Melted!

Lunch today was a turkey pastrami in a light bun with baked ruffles and the rest of my tortilla soup from yesterday.  The soup pics turned out horrible, but the sammie turned out good! So for dinner I made chicken parmesan.  No real recipe, but tonight I brushed on egg whites before dipping the chicken in seasoned panko bread crumbs and it worked really well....

Soup and Sammie

I forgot my camera cord (switched bags over the weekend!) so I’ll post lunch with dinner.  All you need to know is this made my sammie! But I do have some other news!  Check out Meghann’s blogging bake sale going on today!  She’s almost reached her goal for her distance marathon!! Mariposa at What Do I Eat Now? is having a great giveaway – lots...

April?? Really??!!

They were predicting 2 – 4 inches in our area, so I guess I am glad we only got this much.  But usually when we get snow this late, we don’t get much of a spring and the next thing you know its 85 degrees! I bought some extra sharp cheddar so you know what that means – apple cheddar sammie!  Today’s breakfast 1.25 ounce Italian...

Pizza Burger . . .

I threw dinner together pretty quickly, and decided to ditch the zucchini and make dinner simple.   But first I have to show you Nurse Hannah’s work:  I cut my finger with a sharp knife while cleaning up – do you have any idea how hard it is to type without one finger?? So my burger was 2 ounces ground sirloin, 2 ounces bulk Italaian sausage,...
