So when Tony heard of his dinner choices tonight, nothing was hitting home!  But once I wrote the southwestern quesadillas, and saw so many of you lean that way, I knew that was what I was going to make for myself – and a great use of leftovers!

Southwestern Quesadillas (one serving)

  • 4 corn tortillas
  • 2 ounces flank steak
  • 1 ounce Mexican cheese
  • 2 tbsp. canned white corn
  • 2 tbsp. fat free refried beans
  • 1/2 tsp. canola oil (for Pam frying)
  • Pam spray

But the star of the show is always the avocado salsa!   I had 2 tablespoons on the side.

So I did have to stop at the store to pick up refried beans, and I saw this and I knew Tony would like it – chicken pot pie.  It was in my grocery stores “gourmet” section – fresh, all you needed to do was bake it for 30 minutes at 350.  It looked good!

So Hannah is driving all by herself tomorrow to meet my mom, sister, her kids, my aunt and cousin and her daughter to go to the Lincoln Park Zoo tomorrow in Chicago.  Now, Hannah has driven this route, not only riding in the back seat, but actually driven it dozens of times, but she is kind of worried she’ll get there without getting lost!  Mind you, this is a 45 mile drive, so that’s kind of far for her by herself.  All I know is my Mom said to be at her house at 10:00 a.m. tomorrow, and Hannah is planning on leaving at 8:15!  

Needless to say, I still think there will be a phone call to me just in case she gets lost!  😀  But I know you can do it Hanners!
