Even though its a bit chilly outside, the sun is shining!  A good day for an Easter egg hunt (if we had little kids!).   I started with a simple breakfast casserole:

  • 6 ounces stale white bread
  • 2.5 cups egg beaters
  • 1 package 50% reduced fat Jimmy Dean sausage, cooked
  • 1 cup reduced fat cheddar cheese
  • pinch of paprika
  • salt and pepper to taste

Combine all the ingredients well and put in casserole dish – bake at 350 for 50 minutes, or until eggs are set and top is browned.

I made my cauliflower au gratin this morning and put together the green bean casserole.  Off to make my deviled eggs . . .but I still did Level 2 advanced  this morning!  Day 12 of 30 complete!  I’ll need it for the food I am going to eat this afternoon!
