Baby food

Since I discovered that I like spaghetti squash, I thought to myself, “there is a whole world of other winter squashes – you’ll probably like them all!” But all squash are not created equal!  I picked this one up at the store: It was called a “golden nugget.”  It had a website on the sticker to check out recipes.  Well, when I got home and went...

Prince spaghetti

I love spaghetti squash, but no one in my family will touch it with a 10 foot pole, so I just bring it for my lunch. Lunch: 9 ounces cooked spaghetti squash 1 ounce diced pepperoni .5 ounce mozzarella cheese 4 ounces homemade marinara I just put everything in a skillet to heat it up and added a nice pinch of Mrs. Dash spicy seasoning...

Overcast

again today.  It’s hard to get up when the sun isn’t shining, but I woke up to Ed’s face in my face!  As soon as I opened my eyes he started heading for the door! Quick 15 minute walk.  The river was moving pretty quick, not sure you can tell in this picture though! Breakfast: 1/3 cup oats 1/3 cup water 1/3 cup hemp milk...

So close. . .

so when I mapped my 26 minute run when I got back, it said it was .4 miles!  No way I only went .4 miles in 26 minutes!  So I decided to drive it after work.  I went .95 miles each way (so close to a mile!) before I turned around, so 1.9 miles in 26 minutes!  That is just over 13 minutes a mile!...

I like running downhill . . .

rather than running up hill!  (This is going to be quick, I have exactly 6 minutes left on my lunch break!)   I’ve walked the route I ran today before, but I guess I never noticed how hilly it was before!  I ran 26 MINUTES WITHOUT STOPPING!  😀 Not sure how far I went, I am going to map it in my car after work. I checked...

Tired Tuesday

I love sleep.  It doesn’t matter what time I go to bed, I always want more.  But I decided that I needed to go to the fitness center in the morning again, since I have been walking Ed in the mornings, I haven’t been in over three weeks.  So I got up early, walked him for 15 minutes, dropped Hannah off to school and did...

Slow and steady wins the race. . .

So my brothers friend John from www.alcoholian.com gave me a recipe for braised short ribs.  As my brother says “he is the best amateur cook I know.”  Please link to his site to get the full recipe, he deserves all the credit! The meat was so tender – I did marinate it a day longer, but WOW!   This is in one of my stock pots,...

Eclectic workout. . .

Okay, so I forgot my Jillian cheat sheet when I went down to work out.  Didn’t realize it until I was already changed.  So I just mixed it up! 5 minute warm up on elliptical 1 x 45 pushups against the wall 1 x 45 crunches 1 x 45 back extensions 1 x 45 triceps 1 x 45 quads 1 x 45 hamstrings 1 x...

Happy Monday!

Update:  Since I forgot my camera, my husband sent me a picture of his breakfast.  I think the beer is a nice touch!  Thanks honey! Hope everyone had a nice weekend!  They always go by way too fast! So half way to work, I realized I forgot my camera on my desk at home.  So you’ll have to imagine my breakfast from yesterday (I had...

Nutella Banana Oat Muffins

I had to use up some bananas, and I was trying to come up with a muffin that my daughter could have at breakfast that is healthy and quick.  Since she is up so early (5:45 or 6:00 a.m.!) she often doesn’t have an appetite right off the bat.  At least this can travel with her!  The secret ingredient was Nutella!  But after we tried...
