Chili Baked Potato

Hannah and I went on some errands.  One of our weekly traditions is hitting our local thift store.  I got this really cute shirt for $3!    Another trip was to the Dollar General to pick up cleaning supplies.  As I was walking down one aisle I immediately knew what I wanted for lunch! So we just hit up Wendy’s for plain baked potatoes and...

Biscuits and Gravy

Well, maybe not a traditional biscuit, but it turned out good!   I ended up using up the rest of my pizza dough last night and rolled out the dough and used my biscuit cutter to make biscuits – they baked at 350 for about 12 minutes.  Very yeasty!  Tony was expecting a flakey biscuit, but once the sausage and gravy went on, it was really...

Reuben Soup!

So this soup is a puree of the kale/bean soup, with the addition of half a can of sauerkraut (with juice) and 4 ounces chopped corned beef. My friend and I discussed the flavor and both decided that the next time I make this, leave out the beans and add carrots and use more of a chicken broth base – and more sauerkraut too!   Good...

Last of the Egg Whites

I used the last of my egg whites to make an egg white sammie – no veggies, just 1/2 cup egg whites, light english muffin and .8 ounce slice of muenster cheese: Then I picked something up at the store that looked interesting.  It’s a Peach Smoothie – 10 ounces was only 120 calories and it provides 20% of calcium and 160% of Vitamin C! ...

Deconstructing Chinese Take Out

One of the hardest things about being an insulin dependent diabetic is Chinese food.   You have no idea usually how its cooked so here is how I deconstruct mine!  So I weighed everything that went on my plate: 3 ounces cooked shrimp 4 ounces shrimp fried rice 3 ounces steamed broccoli 4 ounces beef broth 2 ounces cooked Chinese noodles 2 ounces cooked chicken thigh...

Plan B

Okay, this is going to be quick, I have exactly 7 minutes left on my lunch break!    Originally I brought baby spinach and carrots to go along side my bean soup.  Since the soup didn’t work out for me, I had to go to Plan B! I used 2 ounces of the sesame bread from Panera (if you haven’t tried this – get it as...

BSI – Kale!

So Beadie is this weeks hostess of the BSI secret ingredient.   I am sure there are millions of people who like kale, I happen to be one that doesn’t.  But that didn’t stop me from trying!  I had beans to cook up so I decided to do:  Bean Soup with Winter Vegetables 4 ounces diced pancetta 1 pound dried beans (any kind) 4 medium cloves...

Icy Roads!

So we only got maybe 1/2 an inch of snow overnight, but then a lovely thing occurred as the temperatures dropped – black ice!   It normally takes me 10 or 15 minutes at the most, today took me 45 minutes!  I even tapped a car in front of me (no damage!) at a stop light it was so icy! And then I heard we may...
