Red Pepper Pizza with Sausage and Spinach

I got to work early today and showed my friend Renee how easy this dough comes together – we were done in about 2 minutes! If I have any faithful readers, you know my office has a full kitchen, two microwaves, a stove, fridge, a separate fridge for just pop AND a wine cooler!   How cool is that?! We set the dough in a bowl and...

Wake-Up Wontons

I was flipping through my new magazine, Taste of Home Healty Cooking, when I flipped the page and immediately knew I was going to make this for breakfast, except using what I had on hand. I separately cooked the eggs to be assembled when I got to work. My co-worker has been wanting to try the Artisan Bread in 5 minutes at home, so I...

Whole Grain Chicken Parm and New Coffee Pot!

Usually my family knows when I have substituted whole grain or whole wheat products – but not tonight!  The whole grain bread crumbs I used actually made the chicken crispier!  Just a dip in egg whites and whole grain bread crumbs seasoned with cracked black pepper and Italian seasoning – I figured each piece of chicken has about 1 tablespoon of bread crumbs. My dinner:...

Quinoa Lasagna

I had to use Tony’s laptop last night because of the storms.  Our home computer has my MasterCook software on it, so I used calorieking.com to figure out my lasagna calories: QUINOA LASAGNA ACTIONS   Cals Fat Carb   10 oz Vegetables, Fresh: Squash, winter, spaghetti, boiled or baked, no salt added 77 0.7 18   2 serving, 1/2 cup (4.4 oz)Del Monte: Pasta Sauces: Spaghetti,...

Steak Sammie!

I used 2 ounces of last night’s steak and added it to my egg white spinach sammie – so good!   Of course, I had to add 1/2 ounce sharp cheddar and splashes of Tabasco! Today is our Jillian work out day.  I haven’t done that since LAST Wednesday!   It will be interesting to see my 60 day stats on Saturday without doing Jillian’s 30 day...

Filet with Mashed Potatoes and Zucchini Spaghetti

I stopped by the grocery store that’s on my way home from work – their 50% meat mark down section was empty!  On to Plan B – I started looking around, and the meat prices were awful!  I ended up finding this, at $7.04: A 4 ounce serving comes in at 170 calories, 8 fat, 1 carb, 0 fiber and 21 grams of protein – it...

Back on track. . .

I hardly used calorieking.com at all  over the weekend, although did  a great job at “guessing” on carbs and my blood sugar, although a tad on the high side (average 130) is not too bad for not micro-managing it like I normally do. But I forgot my glucose meter on the kitchen counter – luckily I had this one mailed to me and I keep...

Happy Birthday Rachel!

Today is my niece Rachel’s 13th birthday!  Since my brother Charlie moved his family to Texas, we don’t see them as often as when they lived in Iowa – all our kids are growing up too fast! I did not want to get up today!  After three days of sleeping in, it was so hard to get up and get going.   I had my usual...

A different kind of Memorial Day Food

Since it was chilly outside, and sprinkling on and off, we decided to eat inside and not have traditional hot dogs, burgers and potato salad – the weather wasn’t right for it!  My mom joined us for the day – THANKS FOR COMING OVER MOM!   Hope you had fun! She brought me beautiful flowers from her garden and arranged them in a vase I had.  They...

BWW and what did she have for breakfast?

When trying to figure out what to get at the store for dinner last night, Tony and I decided to grab a beer at Buffalo Wild Wings and get take out to bring home.  I ended up getting the naked tenders with my new favorite sauce – SPICY GARLIC!  OMG, this one is amazing – the perfect balance of heat and flavor. Tony and I...
