Usually my family knows when I have substituted whole grain or whole wheat products – but not tonight! The whole grain bread crumbs I used actually made the chicken crispier! Just a dip in egg whites and whole grain bread crumbs seasoned with cracked black pepper and Italian seasoning – I figured each piece of chicken has about 1 tablespoon of bread crumbs.
My dinner:
- 1 ounce mozzarella cheese
- 1 tbsp. whole grain bread crumbs
- 8 ounces cooked spaghetti squash
- 1 cup baby spinach
- 1/2 cup meat sauce
- 4.5 ounce chicken breast
This afternoon I could start to feel my blood sugar drop – I was moving a bunch of boxes today. So this is one of my favorite snacks:
That didn’t do the trick and I ended up eating one Matt’s chocolate chip cookie that was in our office kitchen – so good! (no pic!)
Lately our coffee pot has not been working right, the coffee overflows, sometimes the basket fills with water and it doesn’t brew a whole pot. We’ve had this coffee pot for probably three years? Time for a new one!
Tony did some research and we bought this one from amazon.com. I like it because 1. it has a timer and 2. after the first run through of just water the water is SO HOT! So its all set for 6:00 a.m. when Hannah gets up. Then it has a top on the karafe to keep it warm for me and Tony an hour or so later.
I got a new magazine today! I know, like I need another one! 😀
I am being summoned into the living room by Tony and Hannah – they are watching one of those ghost shows and apparently this one is supposed to be scary!

I like the pretzel rod snack idea!! I used to eat those jumbo pretzels with mustard all the time so I may need to steal this snack idea 😉

That chicken looks yummy. I used the whole wheat bread crumbs (that I made myself) and agree that it makes the chicken crispier.
I had to get a new coffee pot recently too. Only this time I decided to get a really cheap one ($10) because my water has a lot of calcium in it and distroys a coffee pot in less than a year. Now I won’t feel so bad about replacing a cheap one so often :o)
Love pretzel rods but never had them with the spicy mustard. Sounds good to me. I usually sneak over to the butter dish and schmear them with butter. So bad, so good. Cool looking coffee pot!
Man, the world needs more spaghetti squash ideas and dishes, so THANK YOU for this! I love spaghetti squash and often use it instead of pasta. This year, I have actually planted a few plants and am hoping I get some decent squash from them!
