I did it!

That circuit was hard, but I did it in exactly 45 minutes.  Even had time to heat up my lunch before getting back to work. Thankfully, the gym was empty, so I didn’t have to be too self-conscious.  However, the jump rope thing, although in my head I thought I looked like this: It really looked like this: Lunch: 3 ounces leftover chicken breast 6.5...

Not a cloud in the sky!

Another beautiful day, but started chilly – 45 degrees!  I still love it though. I made coffee in the french press since it was just for me.  Tried a new creamer and I actually like it better because it is just slightly sweet. I am training for a 5K and doing the “couch to 5K” program.  This morning I did 5 minute warm up and...

Dinner . . . blah

As I was filing at work today, I looked out my window, only to be freaked out, because for a second I thought this bug was on the INSIDE of the window!  Luckily for me, it was outside! About a week ago, my daughter and I got a Greek chicken salad at of all places was A GYROS, ITALIAN BEEF STAND!  Yes, we got past...

Beautiful fall day!

Here’s what it looked like when I left my house this morning – beautiful! My blood sugar was 66 when I got up, so I had an ounce of puffins with 2 ounces of skim milk.  I didn’t take insulin and everything worked out great.  Post workout it was 103 – yeah! EXERCISE:  I did 35 minute bike ride (about 7 miles) and 10 minutes...

The verdict. . .

I LIKED THE MAHI MAHI!  It didn’t taste fishy at all.  There seemed to be a lot of oil in the package, so I just brushed a little on the top before I flipped it.  Decided to skip the salad and made parmesan zucchini rounds with rice.  Simple Monday dinner!   EXERCISE:  yes!  40 minutes elliptical, 5 minute abs BS: before workout 101.  Ate 15...

Rainy Monday. . .

The weekend was so beautiful, I am glad the weather cooperated and is rainy on a work day! I went to Trader Joe’s this weekend and found these granola bars: They taste just like girl scout peanut butter cookies!  I added half of one bar to my oatmeal this morning and it was awesome – half is only 95 calories, 2 fat/13 carbs. I am...

Perfect weather (and ribs)

It was a beautiful day here.  Perfect temperature, fluffy clouds and sun.  I love this time of year!   A couple months ago, I tried making ribs.  I found a recipe that said to precook the ribs in foil, in the oven, for one hour at 350 degrees.  Remove and then cook on the grill.  The result?  The worst ribs I have ever eaten!  Tough,...

Taco Soup Bread Bowl Lunch – yum!!!!

We took the 30 minute trek to Whole Foods and finally found the wheat berries I’ve been wanting to try.  Still not sure how to cook them, but we’ll see! My daughter and I spotted these ciabatta rolls, and I instantly knew that we would have bread bowl soup for lunch.  I cut off the top: Scooped out as much of the inside bread as...

Taco Soup

I eat soup all year round, but something about the temperatures dropping, the leaves starting to turn, that I love it even more. Here we go: 48 ounces of vegetable juice 10 ounce can of Rotel tomatoes with green chilis 15 ounce can of Hominy (never had this before and I LOVE IT!) 28 ounces of chicken broth (2 cans) 1 smoked jalapeno pepper (left...

My garden overflows. . .

I wish!  After several years of attempting to be gardners with marginal success at best, we let the grass grow over our garden and just wait until the end of the season to make homemade salsa and pasta sauce.  And look at the price of all these tomatoes!  Add 1.00 for 10 limes, and .57 cents for the jalapenos, this is going to make lots...
