As I was filing at work today, I looked out my window, only to be freaked out, because for a second I thought this bug was on the INSIDE of the window!  Luckily for me, it was outside!

About a week ago, my daughter and I got a Greek chicken salad at of all places was A GYROS, ITALIAN BEEF STAND!  Yes, we got past the delicious smells, and ordered a grilled chicken salad.  But the best part about it was the chicken – so flavorful and moist! 

When we got home, we found a recipe and quickly tried to reinvent the delicious chicken by finding a Greek marinade.  Mission accomplished, a day goes by, I realize this is not going to fit in our meal plan and decide to freeze it, marinade and all.

I defrosted it today, and planned on cooking it tonight.  It looked good going on the grill, but I don’t know if I over-cooked it, or the marinade didn’t work well with the freezing/defrost method.  It was just blah.

So dinner wasn’t a total loss!
