Sunset and yummy dessert

We had a beautiful day, followed by a beautiful sunset! Dinner tonight was beer can chicken again.  I didn’t overcook it and have lots of leftovers to make something – not sure what yet! I made skin on mashed potatoes and cheesy broccoli.  While the potatoes were boiling, I used the steam to steam my broccoli: Altogether: I have no ideas how many calories specifically...

Second Grade Soccer

You have to love second grade soccer.  There is no goalie, there is no score kept, and everyone has a great time.  I love that even when the other team scores, everyone jumps up for joy! Here is our grand-nephew: We had breakfast/lunch out after the game.  Mine was good, but I wished I would have gotten what my husband got! But here is what...

Happy 70th Birthday Dad!

Wow, that’s weird to say because sadly he died 10 years ago at the age of 59.  He didn’t even get to see 60! It’s days like today that I miss him the most though.  Growing up my dad was an artist and mainly worked at home (and consequently, rarely left the house!).  So he was always there.  He wasn’t the Dad who went on...

Spaghetti Stir-fry

Okay, good think I can type fast because I have 10 minutes left of my lunch break.  Before I get onto my “spaghetti stir-fry” I have to tell you a funny story. So I went down to our fitness center, and I am usually the only one there.  First one in gets to decide what’s on TV.  So before going down, I see that Healthy...

Snap, crackle, pop

No, I am not having rice krispies for breakfast.  I am talking about the best fire I have ever made! We have a wood burning stove in our house, and it was quite chilly last night.  But we refuse to turn on the heat the first week of October!  So I decided to light a fire.  Mind you I SUCK at making fires.  Once they...

Low carb pasta

One of the items I got at the farmers market was an 8 ounce bag of low carb garlic fettucine.  The woman who sold it made it all fresh and then dried it.  She does mail order too:  www.pastabysue.com. I actually liked the taste of it!  But the best part?  4 ounce cooked pasta: 70 calories, .5 fat, 12 carbs, 9 fiber (!!) and 6...

Two Words – Cheese Curds!

So I went to the local farmers market at lunch, and it was very tiny and right next to the train tracks! That very first table on the left?  All it had on it was apples.  No signs with specific types of apples, any prices, just apples.  I walked right on by.  But lo and behold, the next table was a CHEESE table and the...

The resurrected pork

was delicious!  The sweet from the peachy pepper sauce mixed with the crushed red pepper made it delicious!  I ended up making an open faced sandwich.  First layer – sauerkraut!  I love sauerkraut so much I can eat it out of the can cold! Lunch: 3 ounces pork barbecue 3 ounces sauerkraut 1.5 ounce hamburger bun 3 ounce baby carrot 2 ounce pepper strips 1...

And the winner is. . .

The first person to comment, MAGGIE!  a.k.a.  www.thesaladgirl.com! It was very scientific on how I chose the winner! When I went to the store this morning, they had the worst selection of Bigelow teas.  But what did I find?  Celestial Seasonings (buy one get one free!) I chose: And then this one: This morning was the coldest yet – 43 degrees!  It was a beautiful...

Nertz! I overcooked the meat!

We have a remote meat thermometer and I should have taken the meat out about 10 degrees below the temp I wanted, like at 150.  But no, I cooked it to 160 and while it rested, it kept cooking.  But all is not lost.  The bbq rub WAS GREAT!  Please go to www.zestycook.com and search for his earlier September post of pork loin with a...
