We have a remote meat thermometer and I should have taken the meat out about 10 degrees below the temp I wanted, like at 150.  But no, I cooked it to 160 and while it rested, it kept cooking.  But all is not lost.  The bbq rub WAS GREAT!  Please go to www.zestycook.com and search for his earlier September post of pork loin with a crust.  I guess the secret was to put the rub on last night because it was SO flavorful!  Thanks Zesty!

DINNER:

  • 3 ounce pork loin
  • 3.5 ounce twice baked potato (made with ff half and half and 1 teaspoon bacon bits and .5 cheddar cheese
  • SAVORY monkey bread

Okay, the story with the monkey bread is a few years ago, my step-son asked if I had ever heard of it.  I said no, but a quick search told me it was dough balls, rolled in butter, then rolled in a cinnamon-sugar mixture, and then put in a bundt pan and baked.  The result?  Deliciously caramelized cinnamon bread!  You flip it over and its this mound of gooey goodness! 

Well I thought, couldn’t you just make a savory version?  I bought refrigerated biscuits (Pillsbury buttemilk biscuits that are 3 biscuits for 150 calories.

Okay, so now what to do with overcooked pork?  Make barbecue!  My grandpa made a North Carolina barbecue that was made from pork shoulder, slow cooked with vinegar, crushed red pepper and Tabasco.  I just grabbed a few ingredients I had on hand and made a quicker version.

I added crushed red pepper, a splash of balsamic vinegar and a splash of chicken broth.

BLOOD SUGAR:

  • normal except for after breakfast, but I think my insulin pen malfunctioned.  Usually it goes “click click click” while it goes in.  This morning it was one giant CLICK.  I assumed that the insulin was injected, but two hours after breakfast it was 291!  No worries, after my workout it was normal again.
