Santa Claus is coming to town!

Earlier we thought Tony had a car emergency, but it turned out to be nothing.  Whew!  But it worked out anyway because he ended driving me back to work and then Hannah can drive to my office for our annual Santa Claus party, then we’ll just drive home together in one car.  Even though she is almost 17, I still make her sit with Santa! ...

Berries in Every Bite!

Well, the roads were a little better this morning, but still kind of slick.  It took me 25 minutes today – could have been worse! Still loving my blackberries!  They are just so sweet!  I dumped the last of my trail mix in with my oats! I am running errands at lunch today, so not sure what’s for lunch – I have a taste for...

Michelle Wins Biggest Loser!

I am so happy Vicky didn’t win tonight!   That being said, EVERYONE looks so amazing!  So basically it was 101 days on the ranch and 102 days at home before tonight.  The fact that some of the them lost 43% of their body weight is incredible!  So I guess I jinxed myself when I said I survived the low blood sugars.  This afternoon, this is...

What was I thinking and cookie loot. . .

We had our Christmas cookie exchange today and I have lots of loot for the holidays!  Nothing a diabetic needs more than cookies!  Although, truth be told, I don’t mind having them around.  It’s salty stuff that I have a hard time staying away from . . . and I know I will soon have Chex Mix in my house in the near future –...

I love grapefruit!

I bought already sliced grapefruit because the container was on sale for $1.99 which is a great deal!  Tony noticed though that the grapefruit was sitting in sugar water!  So I drained the juice and just ate the grapefruit.  We’ll have to see how I did with my insulin though! Yesterday my blood sugar was low ALL DAY.  In fact, while making dinner last night,...

Feeling the blog love. . .

I got a suprise today from my blog friend Maggie and www.saladgirl.com!  She got tagged and is passing along the blog love. . . thanks!   Maggie likes organic ketchup on just about everything and has been known to add vegetarian hot dogs to salads – I am not kidding!  She routinely comes up with interesting combinations, so check her site out when you can!  I’ll...

Monday mornings. . .

are always busy ones!  I don’t know if its because I am rested, and have more energy?   Lucky for me, the blackberries were still on sale this weekend!  So I had blackberry/coconut/trail mix oatmeal. So I am sitting at my desk, when all of a sudden I feel my cheeks get hot and I start to sweat – sure sign of low blood sugar!  Yep,...

Panettone is done!

The verdict?  It tastes like a bundt cake.  It didn’t have the bite like panettone we have tried before.  Not to say that it wasn’t good though!  Sorry it wasn’t done until after Joe went home though!   On the plate: So it was a good “cake” but I think I’ll try another recipe to see how it compares.  See you tomorrow!

No Fail Meatloaf

Tony is a huge fan of meatloaf.  Me, not so much!  Here is my no fail meatloaf recipe: 1.5 pound meatloaf mix (if you don’t see it, ask the butcher for it.  It’s a combo of  ground beef, veal and pork) 1 slice bread, torn up 1 egg 1 teaspoon salt 1/2 teaspoon fresh black pepper 4 tablespoons ketchup (more needed for topping) 1/2 cup...

Great concert!

The Christmas concert was fantasic as always – nothing like 25+ Christmas songs to get you in the spirit of Christmas! Here’s Hannah before the concert: Mom came over after church so it was just in time for lunch!  I made www.pioneerwomancooks.com Pasta Alla Vodka with Grilled Italian sausage.  My plate: Served with Wisconsin garlic bread.  I call it that because it reminds me of garlic...
