We had our Christmas cookie exchange today and I have lots of loot for the holidays! Nothing a diabetic needs more than cookies! Although, truth be told, I don’t mind having them around. It’s salty stuff that I have a hard time staying away from . . . and I know I will soon have Chex Mix in my house in the near future – yum!
So all I brought for lunch today was spaghetti squash with my marinara sauce. When I put it in calorieking, my bowl of food is only 161 calories! I didn’t bring anything else to go with it! Hopefully the fiber will keep me full til dinner. And I don’t think I can tell the difference between the cooking in the microwave vs. oven baked, so I may just do the microwave thing from now on since its quicker.
Afternoon break is over, and its starting to snow. It’s really fine though so maybe it won’t be too bad? Keep your fingers crossed that my commute home isn’t horrible! See you tonight. . . Don’t forget Biggest Loser Finale!

There is no real recipe for my spaghetti squash. This last time I nuked my spaghetti squash for 2 minutes so I am able to cut it open. I take all the seeds out, then I baked it on a jelly roll pan (or casserole dish) with 2 inches of water at 375 for 12 minutes, skin side down. Let it cool and then using a fork, scrape out the spaghetti from the skin.
If I microwave it, depending on the size, its anywhere from 6 to 8 minutes. I just poke it with a knife before nuking it.
I used some of my vokda sauce I made earlier – there is a link under my recipe bar – but any bottled sauce would do!
I would double the portion, I am a bit hungry now!
Can you share the spaghetti squash with marinara sauce recipe? It looks good and for 161 calories, I would splurge and *gasp* have 2 servings!

awww… quite a cookie loot. I’m kin dof glad we don’t have a cookie exchange at my work. Considering I am the only one who lives in my apartment, I know if would not be a good thing.

I see fudge =) That’s the one thing i want to have this year. If i make it I’ll eat it all. If it doesn’t show up at any of the parties i go to this year. I’ll just have to make some…on second thought maybe I’ll buy some so i don’t end up with leftovers. As long as I keep exercising and don’t over do it, i should be fine.
