I can’t believe we’ve made it 7 days in a row!  And you know what?  I can already feel a bit of a difference – the push ups aren’t as hard (even though I am still on my knees) and the cardio is getting a bit easier too.

I may stick with level 1 advanced during the week and do level 2 on the weekends.  I can’t even begin to imagine what level 3 is like!

I have the detailed calories at home, but this lunch was so filling!   I love these whole wheat lasagne noodles because they are flat, and fit into a bread pan perfectly – I used three sheets for the whole recipe:

and they also don't need to be precooked which saves time!

My cheese mixture is 1 cup 4% cottage cheese mixed with Italian seasoning and crushed red pepper and cracked black pepper:

I am starting to like cottage cheese better than ricotta!

The middle layers is a mixture of cooked spaghetti squash (mine ended up being 10 ounces total) and two cups chopped fresh spinach.  I ended up using about 1 cup of my homemade marinara sauce between the layers too.

I added 2 ounces of part-skim mozzarella to the top before going in a 375 degree oven for 45 minutes

It doesn't look that pretty, but it was SO delicious! Look at the serving size! I have the exact stats at home, but lunch comes in at right around 500 calories
