Breakfast

If you are not on the pumpkin spice bandwagon, then these apple crunch muffins will be your go to muffin recipe this fall. What kind of apples are best for muffins? There are so many varieties of apples these days that it’s sometimes hard to figure out which ones are best for baking.  In my experience, fuji apples, honeycrisp apples and zestar apples are my...

You will love this mini zucchini bread recipe.  No oil, no butter, yet fluffy and delicious! Can you make zucchini bread without butter or oil? Absolutely!  Most recipes will tell you to use applesauce in place of butter or oil.  But I find that I don’t get the right crumb when I use applesauce as a replacement.  In this recipe, I used cottage cheese and...

You won’t be able to tell this is a lightened up banana bread.  It’s so light and delicious! My late husband LOVED his Mom’s banana bread.  And no wonder because it had 1 1/2 sticks of butter and 1 1/2 cups of sugar.  I’ve tasted it and it’s delicious.  But her recipe is also 15 WW points per slice. This is my homage to her...

My go to “snack” on my way to work on the train was an Otis Spunkmeyer banana nut muffin.  Those are 20 WW points!  These jumbo zucchini muffins come in at just 8 – whoop! When I think back to how I used to eat, it was no wonder I got to 211 pounds.  With my recent loss this week of another 1.2 pounds, my...

Nearly 5 years ago I wrote a recipe for mini veggie quiches.  That recipe called for 2 tablespoons of butter Crisco. The recipe was due for a makeover, so I subbed in just one tablespoon of salted butter and the result is these biscuit quiches.  The crust tastes like biscuits! This is perfect for meal prep, because you can make them over the weekend.  My...

These strawberry lemon muffins are the perfect spring breakfast or snack. Each one is 4 WW points and around 180 calories.  Delish! I recently found Beth from The First Year on Instagram.  You can find her blog here. If you’ve been around here for a bit, you know I don’t bake much.  Because it’s a science.  You need to mix the right ingredients together and...

These birthday cake donuts turned out so good! Baking is not my forte, so I looked at a bunch of recipes online to find baked donut recipes. Many of them had yeast and required a slow rise overnight in the fridge, and I wasn’t about that life. Ina Garten had a recipe that was more of a “batter” but when I saw that her 12...

Blueberry Cottage Cheese Scones These blueberry cottage cheese scones taste like a scone and a biscuit had a baby.  So light and fluffy! Cottage cheese is getting a glow up and I am here for it.  It seems that on every social media feed I am finding more and more recipes with cottage cheese. If you think you don’t like cottage cheese, I highly recommend...

You will want to put this Classic Idaho® Russet Potato Crusted Quiche on the top of your list of recipes to make! If you have followed me for any length of time, you know I puffy heart potatoes.  Like a lot.  The number one question I get asked though when I eat them is: “Biz, you are diabetic, you shouldn’t be eating potatoes!” False!  Not...

These almond scones are probably the best scones I’ve made to date – so good! Ever have the Starbucks Almond Croissant?  Not even sure they still sell them, but back in the day, I would eat one of those as a snack.  Like on the train going to work.  A pre-breakfast if you will. That “pre-breakfast” was 17 points.  Gah.   When Hannah and I were...
