My late husband used to hate tiny food, but I absolutely love it!  Mini cinnamon bread?  Yes please!

Growing up in the Chicagoland area, Entenmann’s was the GOAT for coffee cake and donuts.  When we had coffee hour after church and there was anything Entenmann’s, I was all over it.

Sadly, 4 mini cinnamon donuts are 13 points, and let’s just say I never stopped at just 4.  Hence why I ended up at Weight Watchers. 😂

What size is your loaf pan?

I bought my mini loaf pans at Goodwill.  Not sure what brand they are, but they measure 4 1/2 by 3 inches, and are 1 3/4 inch deep.  The closest thing I’ve found are these silicon molds, which I really like because you could also use these in your air fryer to make breakfast bakes and things like that.

What ingredients do you need for cinnamon bread?

  • all purpose flour
  • ground cinnamon
  • baking powder
  • salt
  • monk fruit (or any non calorie sweetener)
  • 1 banana
  • 1 egg
  • 1/3 cup nonfat greek yogurt
  • 1/3 cup sugar free pancake syrup
  • 1 teaspoon vanilla paste
  • 2 tablespoons light butter, melted (I used I Can’t Believe It’s Not Butter light)
  • 1/3 cup cashew milk
  • Cinnadust

Mini Cinnamon Bread

Yield: 4 mini loaves
Prep Time: 5 minutes
Cook Time: 13 minutes
Additional Time: 15 minutes
Total Time: 33 minutes

I used to be obsessed with Entenmann's Mini Cinnamon donuts - but 4 mini donuts are 13 points! These mini loaves are just 5 WW points on the diabetic plan, and 4 WW points on the regular plan. They are sweetened with monkfruit and sugar free pancake syrup.

Ingredients

  • 1 cup all purpose flour
  • 2 teaspoons cinnamon
  • 1/4 cup monk fruit (or any other no calorie sweetener)
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 banana
  • 2 tablespoons light butter, melted
  • 1 egg
  • 1/3 cup nonfat yogurt
  • 1/3 cup sugar free pancake syrup
  • 1 teaspoon vanilla bean paste
  • 1/3 cup unsweetened cashew milk
  • 2 teaspoons Cinnadust

Instructions

  1. In a small bowl, mix the flour, cinnamon, monk fruit, salt and baking powder together. Set aside.
  2. In another bowl, mash the banana with the butter, egg, yogurt, syrup, vanilla bean paste and milk. Mix until combined.
  3. Add the wet liquid to the dry liquid, and mix just until combined without over mixing.
  4. Let batter sit for 15 minutes to let the baking powder do it's magic.
  5. Divide batter between 4 mini loaves. Sprinkle 1/2 teaspoon Cinnadust on top of each loaf. Swirl with a toothpick.
  6. Bake at 375 for 12-15 minutes, or until golden brown and they start to pull away from the sides. I cooked mine the full 15 minutes.
  7. Let cool 10 minutes before removing from loaf pan.

What's better than mini cinnamon bread than mini cinnamon bread French toast?!

Ingredients

  • 1 loaf of mini cinnamon bread (recipe above)
  • 1 egg
  • 1/4 cup unsweetened cashew milk
  • 1/2 teaspoon cinnamon

Instructions

  1. Heat skillet with avocado oil spray over medium low heat.
  2. Whisk the egg, milk and cinnamon together.
  3. Slice the loaf into 8 pieces. Soak each slice for a few seconds on both sides.
  4. Cook 3 minutes on one side, flip and cook an additional 3 minutes.
  5. Optional: sugar free pancake syrup

Notes

Without the pancake syrup, the french toast mixture adds zero points to the original recipe. I ate 4 slices and was perfectly content with that, but feel free to eat the whole loaf! #nojudgment
