More than a month ago my neighbor asked me and Hannah to participate in this years local Memory Walk to raise money for Altzheimer Disease. We jumped at the chance to join them! But guess what? The walk is on Sunday! I hoped to raise $100 for the cause, so here is where I need your help.

Our weather was absolutely stunning yesterday. I took these pictures on my drive home from work.
Breakfast was back to an oldie but a goodie – the egg white sammie!
I got to the gym today. I was pissed because I felt like watching Food Network while doing 45 minutes on the elliptical. Rachael Ray was making shallot pasta (ick) and Ina Garten was making baked onions! It was a conspiracy of onions! 🙁 I did get a great workout in though – level 10 for 45 minutes with a 5 minute cool down on the treadmill.
Lunch was leftovers – the last of my Sesame Chicken. I did spike it up with a tablespoon of szechwan sauce though.
Last week I was watching Rachael Ray and she was doing bone in pork chops with a golden apple sauce. I was grilling a pork roast, so I just did the apple sauce on the side. This was delicious! I rarely use golden apples because my go to apple is fuji, but I loved the sweet/tart combination of this.
You’ll notice my recipe is nothing like hers because a: I didn’t have apple juice and b: I reduced the amount of brown sugar from 3 tablespoons to 1.
Golden Apple Sauce (printer friendly version)
Makes 4 servings (138 calories, .4 fat, 36 carbs, 4.1 fiber, .9 protein)
Ingredients
4 | golden delicious apples, peeled and chopped |
1/2 | cup lemonade |
2 | teaspoons lemon juice |
2 | ounces golden raisins |
1 | tablespoon brown sugar |
1/2 | teaspoon ground cinnamon |
1/2 | teaspoon ground nutmeg |
Directions
Combine all ingredients in a medium pot placed over medium high heat. Cook for 12 to 15 minutes, until reduced and sauce is thickened.
Stats for Wednesday:
- 1412 calories, 168 carbs, 112 protein, 36 fat and 36 fiber
- 22% of calories from fat
- 45 minute level 10 elliptical
- 5 minute cool down

just wanted to give a shout-out, your blog always cracks me up. 🙂
I often watch Food Network while on the treadmill or elliptical. It’s actually a good motivation to work out. We don’t have TV at home, so the only way I’m able to see TV shows like that is to go to the Y and workout. (They have little screens on each cardio machine. I love it.) Rachael Ray and Paula Dean are my favorites. However, I do feel a little silly sweating away on the elliptical while watching Paula Dean make 3000 calorie brownies.
Or better yet, when Ina Garten is making buttermilk biscuits, throws in two whole sticks of butter, then states “I like to use buttermilk because its low fat!”

I’ve tried okra a few times. Fried is okay, or chopped tiny in gumbo. That’s it.
I love okra in gumbo. Yum! Now I want to make some gumbo.
And you like cheese? I would have never guessed.
I think I’ll pass on the okra, but I think I once had an okra veggie burger and it was good. I am really liking the egg white sammie idea.

Okra is not something I make, but there’s an Indian food buffet place that has a yummy okra dish that I love; I think it’s okra masala, but I’m not sure. So I think okra would be really good with Indian spices. I found a link with some interesting recipes; some call for stuffing the okra with a spicy paste before frying, you could probably adapt that for the deep fryer, maybe breading them with garbanzo bean flour? And I looooove pork with apple sauce. I’ll have to try making this sometime. Fruit goes so well with pork, doesn’t it? The fruit-stuffed pork roast from the Silver Palate cookbook is really tasty; it calls for apricots and prunes.

Not an okra fan, but I guess if you deep fry it and serve it with Ranch dressing I might be able to choke a piece down. LOL – maybe my okra is your onion?
That made me laugh out loud! I’ve heard raw okra is slimy? I’ve only had it deep fried, and seriously, I’ll eat just about anything deep fried, just don’t tell me what it is! 😀
My whole entire life we grew up eating applesauce every single time we had pork. My mom would always doctor up the jar kind, unless apples were in season and then it was homemade. Even though I don’t usually serve it, whenever I eat a pork chop I always think of applesauce!

It is funny cause when I work out, I love to watch the Food Network. I thought I was the only one.
I love cooked apples with pork. In fact, that’s my dinner tonight! My recipe is very simple: peel, core and slice apples, put in a frying pan with a little butter (the real stuff), sprinkle with cinammon and nutmeg, cover and cook over medium heat for about 10-15 minutes. Bonus: no added sugar!

Every time I see pork and apples together, I think of Peter from the Brady Bunch saying “Pork chops….and apple shosh” Growing up in an Asian family, I never had this combo. Ever since I discovered it, it’s been a regular rotation at our house! Never though to try it with Golden Apples before. Sounds so good!
