More than a month ago my neighbor asked me and Hannah to participate in this years local Memory Walk to raise money for Altzheimer Disease.  We jumped at the chance to join them!  But guess what?  The walk is on Sunday!  I hoped to raise $100 for the cause, so here is where I need your help.

Our weather was absolutely stunning yesterday.  I took these pictures on my drive home from work.

Breakfast was back to an oldie but a goodie – the egg white sammie!

I got to the gym today.  I was pissed because I felt like watching Food Network while doing 45 minutes on the elliptical.  Rachael Ray was making shallot pasta (ick) and Ina Garten was making baked onions!  It was a conspiracy of onions! 🙁   I did get a great workout in though – level 10 for 45 minutes with a 5 minute cool down on the treadmill.

Lunch was leftovers – the last of my Sesame Chicken.   I did spike it up with a tablespoon of szechwan sauce though.

Last week I was watching Rachael Ray and she was doing bone in pork chops with a golden apple sauce.  I was grilling a pork roast, so I just did the apple sauce on the side.  This was delicious! I rarely use golden apples because my go to apple is fuji, but I loved the sweet/tart combination of this.

You’ll notice my recipe is nothing like hers because a:  I didn’t have apple juice and b: I reduced the amount of brown sugar from 3 tablespoons to 1.

Golden Apple Sauce (printer friendly version)

Makes 4 servings (138 calories, .4 fat, 36 carbs, 4.1 fiber, .9 protein)

Ingredients

4 golden delicious apples, peeled and chopped
1/2 cup lemonade
2 teaspoons lemon juice
2 ounces golden raisins
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Directions

Combine all ingredients in a medium pot placed over medium high heat. Cook for 12 to 15 minutes, until reduced and sauce is thickened.

I did add habanero mustard as a dipping sauce to my plate after I took this picture 😀 Dinner comes in at 455 calories, 62 carbs, 33 protein, 8.5 fat and 8.1 fiber
