Grilled Cornish Hens with Wild Rice Stuffing

I believe we have finally made delicious Cornish Hens!  The problem with hens is that we always have to buy them frozen, and they are rock hard.  This time I did a slow thaw – they have been in the refrigerator for a full 7 days and they were perfectly defrosted! The weather was so nice this afternoon, I decided to sit outside while Ed...

Beautiful Day!

Today is one of the few days that’s actually felt like summer!  We got a lot done today already – Tony took care of the yard while I tackled the inside. Two things that needed MAJOR rehauling was my seasoning cabinet – there were so many things in there I literally haven’t used in years!   Hannah was very proud of my organizational skills when she...

The calm after the storm. . .

It was so stormy last night I didn’t want to turn on the computer!  Wave after wave of storms, but we were lucky that the tornados (or possible tornados) went north of us. After it was over, Hannah and I took Ed on a quick walk. But look at all the rain water pouring into the river! Tomorrow marks the First Annual Father’s Day Fry...

You know its a bad weather day

when your 8:00 p.m. softball game is canceled at 10:30 a.m.! Breakfast was a non-Biz one!  I give you apple ice cream! Once I took that pic, I just mixed it all together – I loved the peanut butter chips – they melted pretty quickly!  Breakfast comes in at 297 calories, 7.8 fat, 11 protein, 45 carbs and 4.6 fiber. I woke up kind of...

Life got in the way . . .

of me posting my blog last night – we had such a fun day!  Hannah picked me up at 12:15 and we started heading to Oak Park.  We didn”t find ONE garage sale on our drive!  About 20 minutes in to the drive, we both decided we were hungry so we stopped here: I almost got an Italian beef because it was their special of...

Half Day – Happy Day!

Since I had four hours overtime earlier this week, I decided to take a half day – it works out perfectly because my SIL and nieces are in from Texas!  They have been staying at my mom’s house – which is about an hour away from us. Hannah’s picking me up around noon – then we will garage sale our way to my mom’s house...

Sugo di Carne

My father-in-law is from Florence, Italy.  Tony and I have recently been looking at Florence recipes – tonights is pasta with meat sauce! Sugo in Florence is mostly a beef and very little tomato sauce.  For a more authentic version, use red wine in place of the tomato sauce. Sugo di Carne 1/2 pound ground sirloin 12 ounces can Italian plum tomatoes (I used my...

Pork and Spaghetti Squash Stirfry

I know it seems like a weird combination, but one of the reasons I love to make stirfry is that its a great way to use up stuff in your fridge! Today’s Combo: 3 ounces bean sprouts 3 ounces broccoli slaw 2 ounces sliced red pepper 2 ounces diced carrot 2 ounces sliced boneless pork 5 ounces of cooked spaghetti squash 2 tablespoons Wonnie’s Korean...

Egg White Scramble

When I got home from work last night Tony and Hannah had already done a Chinese food run.  I had asked Hannah to make the Artisan bread earlier in the day to make cheese bread to go with the pasta I was going to make last night.  I must have told her the wrong measurements, because she added 4 cups of water instead of three...
