Breakfast Tacos

Breakfast Tacos
Have I mentioned that Hannah and Jacob don’t really eat leftovers?  Like hardly ever.  Maybe soup.  Jacob will definitely eat cold fried chicken and steak, but that’s about it.  Tony never liked them either.  So I get to be creative with the leftovers.  And 9/10, if there is leftover beef, I will be making breakfast tacos. Three corn tortillas (5) filled with scrambled egg whites...

Steak Breakfast Toast

Steak Breakfast Toast
I loved reading all your comments yesterday on my Blog Anniversary – so many readers who have stuck with me for years – I love it!  I forgot to mention that I am running my giveaway until I pick a winner on Friday – so good luck!  And, I did find out that my last giveaway recipient in Canada got my BBQ sauce!  It only...

Deconstructed Steak and Potatoes

Deconstructed Steak and Potatoes
Another market day yesterday meant a bigger breakfast.  I tried to see if I could use Olivio spray on my breakfast grilled cheese. The answer to that questions is a big fat no.  While it browned my bread, it didn’t make it crisp like a buttered grilled cheese – next time I’ll spend the extra point for 1 teaspoon of butter.  The inside tasted good! ...

Beef and Veggie Lo Mein

Beef and Veggie Lo Mein
I had a very productive day yesterday!  I think I am getting used to all the manual labor, because I wasn’t as lethargic yesterday like I normally am after working markets two days in a row.  #winning!  I made a list of everything I wanted to get done, and did it all except get gas, but I can do that today.  It was gorgeous out...

Spicy Thai Red Curry Beef

Spicy Thai Red Curry Beef
I guess one of the best things about writing a blog post as often as I do, is that my Mom and my PIL are always apprised as to what I am up to.  I don’t talk to them nearly as often on the phone because they can just read the blog and see what I am up to.  When I wrote on Friday that...

Marinated Grilled Flank Steak

Marinated Grilled Flank Steak
I’ve been kind of going through the motions with Weight Watchers.  I know the smart point meals I make are on point.  That’s not the problem.  The problem is all those little “extras” that never seem to get added to my WW app.  The hazelnut creamer in my coffee x 4+ times a day.  The extra glasses of wine while away.  The bites of Cheetos...

Mushroom Steak Sauce

Mushroom Steak Sauce
Somehow (maybe because I watch a lot of Food Network?!) Jacob asked me the other day who my favorite chef is on the network.  I’d have to say food wise, it would be Bobby Flay.  A:  Because I love spicy stuff!  B.  I love meat and he’s a grill master and C. I like his throw down show where he cooks with regular home cooks....

Alive!

Alive!
I had such a fun weekend.  It started out early on Friday morning.  I had to catch the 7 a.m. train to Chicago to get to the train station by 8:00 a.m. – and that’s the express train, which will show how far NW I live from Chicago – 55 miles to be exact.  I had to be to Kendall College by 8:30, so I...

Crock Pot Beef and Bean Chili

Crock Pot Beef and Bean Chili
Crockpot Beef and Bean Chili This crockpot beef and bean chili is a perfect recipe on those weeks when you are short on time to get dinner on the table. What have I been eating? Skinny Meatball Sub!  I used two slices of Aldi light bread (2), 1/4 cup of baby spinach, 1/3 cup jarred pizza sauce (1), 4 ounces of sirloin that I made...

Braised Short Ribs Over Creamy Polenta

Braised Short Ribs Over Creamy Polenta
I think the only thing that can surpass Hannah’s love of Starbuck’s is her simultaneous love of both Wal-Mart and Target.  Whenever she wants to go to either of those places and asks Jacob or I to go with her, our question to her is “are you only picking up a couple things or walking around the whole store?”  Because she loves to spend a...
