Happy Birthday Tony!

Happy Birthday Tony!
September 22, 2000.  It would be the first birthday Tony and I would spend together.  We met at the end of May in 2000.  About a month into our relationship, he was living at my house during the week, we’d go pick up his son on Friday and spend the weekend at his house.  I’ll still never forget my step-son Joe’s face when he looked...

Happy Birthday Joe!

Happy Birthday Joe!
My step-son Joe turns 23 today!!  I can’t believe it.  He was so cute when I met him.  He was a bit chubby, had this buzz cut hair that Tony cut for him in his parents kitchen.  He was 10 years old when I met him! And now he’s been living in Texas for the last two years with his fiancé Lizz.  While we miss...

Broccoli Rabe Pesto … Pasta

Our neighbor is a huge NIU football fan.  Both he and his wife went there, his daughter goes there now.  The only problem is that some games are on some weird sports channels, and as Tony is a lover of all sports (except basketball and hockey – those are two sports we never watch.) As luck would have it, we did get the channel and...

Go ahead and take two bites of the cake.

Go ahead and take two bites of the cake.
I brought breakfast treats for my bosses birthday – I am remiss – he’s turning 27 not 26 – still a baby in my eyes though! I ended up making blueberry muffins, but added a lemon zest glaze to the top – just 3 tablespoons of powdered sugar with 1 teaspoon of milk to start (add more if needed) and then the zest from one...

Reason 1,001 Not to Leave the Deep Fryer on the Counter

Reason 1,001 Not to Leave the Deep Fryer on the Counter
By the end of the week, the refrigerator has thinned out and I try to use up as much stuff as I can without being wasteful. First thing I saw yesterday morning?  Leftover scalloped potatoes!  I decided to make a hash with them:  3/4 cup scalloped potatoes, 1/2 cup egg white, 1/2 cup baby spinach – I just threw it all in non-stick pan and...

Monkey Rarebit

Monkey Rarebit
The weather this weekend was perfect.  Highs around 70, lows in the 50s.  Now if I could just find a place that has that temperature all year round, I’d move there in a second! Thanks for all the well wishes for my 5k!   I didn’t come in last for my age group either!   I’ll take 13 out of 18 for my age group –...

5K? Done!

5K? Done!
So yesterday before work I had my full body scan at the dermatologist.   It was intimidating laying there naked while a woman had a light powered magnifying glass went up and down my body, front and back about an inch away from it. I had to laugh though as she was going over my stomach – you can obviously see my insulin injections – sometimes...

My Chest is Normal!

My Chest is Normal!
Well, the good news is that my chest x-ray came back normal, so no lung cancer (ha!), or pneumonia.  He described what I have as “bronchial spasms” and the best course of action is . . . more prednisone.   I also have a stronger cough medicine and he wants me to use the inhaler 5x a day vs. 3x a day. He said the only...

I jinxed myself.

I jinxed myself.
I woke up fine yesterday morning.  No coughing!  But around 10:00 I could feel the pressure in my chest building again, and by noon my cough was alive and well.  I think its because I finished the prednisone on Monday and by noon yesterday it just wore off. I’ve been through two z-paks, 3 bottles of prescription cough medicine, a bottle of antibiotics, prednisone, cough...
