Bagel Birthday Breakfast. . .

Ramen chicken noodle soup

Since its just me for dinner tonight, I decided to use the last of the beer can chicken to make Ramen noodle soup.  So simple! 8 ounce chopped chicken 1 cup chicken broth 4 cups water 3 ounce chopped carrots 6 ounce diced canned potato 1 package chicken ramen noodles (with seasoning) Just throw everything except noodles in and simmer until carrots are cooked.  Add noodles...

One word – amazing!

Using up more leftovers, I made tostadas with the homemade tortillas.  THEY WERE SOOOOO GOOOOOD! 2 ounces diced chicken mixed with 2 tablespoons green salsa 1/4 cup veggie refried beans as the base 1 ounce chopped fresh spinach 1 ounce pepper jack cheese Tabasco! Off to do laundry . . .

To www.hangrypants.com for the picnic wrap recipe!  So light!  I ended up getting 10 tortillas out of this recipe: 2 cups whole wheat bread flour 3 tablespoons vegetable oil 1/2 cup water 1/2 teaspoon salt (which I forgot to add!) Lazy Saturday morning

I LOVE sleeping in.  I didn’t get out of bed until 9:00, but I was starving! party pizza Friday!

I tried to make a deep dish pizza tonight – and it turned out pretty good.  The only thing I would have done differently is not oil the sides of the pan, because when I tried to make the dough stick on the side, it kept sliding down.  I cooked it on my lowest oven rack.  This one is ground beef, Italian sausage and mushroom....
