Bagel Birthday Breakfast. . .

My step-son is 19 today!  We are having a quick breakfast because a fondue feast is on the menu for lunch while the Bears are playing. 1/2 honey whole wheat bagel 1 egg 1 sausage link 1 ounce extra sharp cheddar cheese Found the birthday boy asleep this morning. . . Ramen chicken noodle soup

Since its just me for dinner tonight, I decided to use the last of the beer can chicken to make Ramen noodle soup.  So simple! 8 ounce chopped chicken 1 cup chicken broth 4 cups water 3 ounce chopped carrots 6 ounce diced canned potato 1 package chicken ramen noodles (with seasoning) Just throw everything except noodles in and simmer until carrots are cooked.  Add noodles...

One word – amazing!

Using up more leftovers, I made tostadas with the homemade tortillas.  THEY WERE SOOOOO GOOOOOD! 2 ounces diced chicken mixed with 2 tablespoons green salsa 1/4 cup veggie refried beans as the base 1 ounce chopped fresh spinach 1 ounce pepper jack cheese Tabasco! Off to do laundry . . .

To www.hangrypants.com for the picnic wrap recipe!  So light!  I ended up getting 10 tortillas out of this recipe: 2 cups whole wheat bread flour 3 tablespoons vegetable oil 1/2 cup water 1/2 teaspoon salt (which I forgot to add!) In a medium-sized bowl, mix together the flour and oil.  Gradually mix in the water (and salt!).  Knead briefly.  Divide the dough into 10 pieces...

Lazy Saturday morning

I LOVE sleeping in.  I didn’t get out of bed until 9:00, but I was starving! The last of the leftover steak – not bad, 3 meals out of the steak!  And those 10 potatos for a $1?  I made potato soup, pan fried potatoes, broccoli cheese twice baked potatoes and hash browns this morning – nice! party pizza Friday!

I tried to make a deep dish pizza tonight – and it turned out pretty good.  The only thing I would have done differently is not oil the sides of the pan, because when I tried to make the dough stick on the side, it kept sliding down.  I cooked it on my lowest oven rack.  This one is ground beef, Italian sausage and mushroom....

Soup and Salad

Down by the River

When I got home from dropping my daughter off to school, my dog was sitting at the top of the steps.  He immediately looked at me, to his leash, and back to me!
