McDonald’s

Okay, I’ll admit it.  Before I started this blog, I may have stopped at McDonald’s on my way to work about once, or twice, OKAY sometimes three times a week.  Something about a scalding hot hash brown potato and a greasy sausage McMuffin with egg kind of set the right tone for the day! Tony would be in my car over the weekend, picking up empty...

Delish lunch, messy dinner

I used leftovers to make my stirfry at lunch today – the last of the grilled chicken, the rest of the tofu, and mixed veggies.  I also tried the Freekeh (sp?!) that I got from Trader Joe’s – the 100% young durham wheat that is to be used as a substitute for rice.  it was so good!  It was chewy, like wheatberries but had kind...

It’s never too early for snowmen

I am all for having a purpose of bringing out anything snowmen (I love them :D) so when the Blogger Secret Ingreident this week was CRANBERRIES I was so excited!   This week’s ingredient was suggested by: http://www.fitnessista.com/ Any kind, whole, dried, Craisins, you name it!  Which got me thinking about the holidays and possible gifts you could give to friends and co-workers.  So this is what I came...

Sunrise and Happy Birthday!

Today is my father-in-law’s birthday – Happy Birthday Carl!  If you could comment with a happy birthday to him, he’d get a kick out of it! This morning was perfect.  I decided to drive two miles from my house to take Ed on a walk at the preserve.  I am not sure if he was more excited about the car ride or new scenery!  I couldn’t pick...

C-food

It was seafood night tonight, although to be fair, I did wrap the shrimp in bacon!  I got the marinated ahi tuna from trader joe’s and grilled it on my indoor grill.  I did a quick marinade on the shrimp – a touch of olive oil, minced garlic, italian seasoning, and a splash of lemon juice. I cut 1 strip of bacon for me, and...

Spaghetti Squash/Quinoa casserole!

Thanks to www.greenlitebites.com, I was introduced to spaghetti squash, and haven’t looked back since! But I found that I was only using it as I would spaghetti – topped with pasta sauce and cheese. I wish I had come up with this idea, but I got it from here:  http://www.artsy-foodie.com/2008/10/what-to-do-with-spaghetti-squash.html I did change it up a bit, with what I had on hand, and changed some...

Hat + Gloves required

It was 35 degrees this morning on my walk with Ed.  I had to pull out a hat and gloves for the walk this morning!  It was so beautiful, sun was shining.  I was only going to go about half an hour, but when I got home I realized we’d walked 45 minutes! Thank goodness I am low maintenance and still able to get everything done, i.e. finish...

Taco night!

As I have said before, Hannah and I could eat tacos/Mexican foods every night if given the chance.  So when Tony is out of town, its taco night! 2 corn tortillas 1 ounce mozzarella cheese (split between chips and tacos) 2 ounces cooked ground chuck 2 tablespoons fat free sour cream .5 ounce tortilla chips shredded lettuce and red cabbage Tabasco! 1 glass red wine...

I love this soup!

I just ran a couple errands at lunch and found myself next to Trader Joe’s.  I did a quick goole search before I left for their soups, and this one was ranked high on everyone’s list.  Organic Tomato Soup!  I like that it comes in a cardboard box, so it will last a while in the fridge.  100 calories, 2 fat, 1 fiber, 16 carbs,...

Sleepy Monday

I was really sleepy this morning – I wished I could have slept in!  I didn’t even take Ed on a walk this morning, just let him out in the back yard for 10 minutes. Breakfast: Still love my english muffin/apple/cheese combo – this morning it was Swiss cheese! With the Bubba Keg – I need to drink more water!  Break is over, I’ll be...
