As I have said before, Hannah and I could eat tacos/Mexican foods every night if given the chance. So when Tony is out of town, its taco night!
- 2 corn tortillas
- 1 ounce mozzarella cheese (split between chips and tacos)
- 2 ounces cooked ground chuck
- 2 tablespoons fat free sour cream
- .5 ounce tortilla chips
- shredded lettuce and red cabbage
- Tabasco!
- 1 glass red wine
This afternoon it was chilly in my office, so I had my 50 calorie cafe mocha (1/2 packet sf cocoa, coffee in place of hot water and 2 tablespoons whipped cream)
New T.J. Finds for me:
It says “is a super substitute for rice, couscous or pasta, and its higher in protein.” I plan on using it in stirfrys. This package is two servings: each serving is 150 calories, 2 fat, 28 carbs, 6 fiber and 5 protein.
Then a new cereal:
Since this is pretty high in carbs, I’ll probably sprinkle 1/4 cup over yogurt with fruit. Has anyone tried this before?
Right now I am cooking down the tomatoes from the $1 rack.
More canning in my future!
I am trying out a new spaghetti squash casserole – if it works out, I’ll post that for my lunch tomorrow.
