Brrrrr

It was the coldest yet this morning – 19 degrees!  I decided to take Ed with when I dropped off Hannah to school so that we could go straight to the trail and have more time to walk.  We walked about 35 minutes – I was prepared, scarf, hat, gloves.  I was wearing my pajama pants, so next time I’ll wear thicker sweats – but...

Quick stiry fry. . .

One of my favorite pieces of cookware that Tony brought into our marriage is a cast iron wok – it holds such remarkable heat!  And speaking of heat, this is what I used on mine and boy, by the time mine was done I was about hacking up a lung!  Um, note to self, add this AFTER the stir fry is done off the heat!  Here...

I’ll feel it tomorrow!

Wow, that workout kicked my a$$!  It’s amazing in just a few days (okay, maybe 7!) how quickly out of shape I can get.  I did Jillian’s routine today and it was tough.  It took me about 40 minutes to complete the circuit, with a 5 minute warm up and 5 minutes of S T R E T C H I N G – which...

I didn’t win . . .

this past weeks BSI recipe contest – sweet potato!  But when I look at the other recipes, I can see why it was hard to pick a winner.  But I do have a great new recipe!  Check out the winners and other recipes here: http://rainforestgurl.blogspot.com/ She also names the person who is choosing this weeks ingredient if you want to jump on the bandwagon! Last...

My mouth is doing a happy dance!

A M A Z I N G!  I cannot believe how good these Reuben egg rolls are!  Simple ingredients and the nutrition isn’t too bad either.  Each egg roll comes in at 175 calories, 4.8 fat, 21 carbs, .75 fiber and 11 protein.  4.5 ounces swiss lorraine cheese, low fat 6 ounces lean corned beef 1 cup sauerkraut 2.5 tablespoons thousand island dressing 8 wonton...

Breakfast and Churros?

It was a lazy morning!  I decided to make hashbrowns from scratch – they always take so long, but so good!  I had 1 egg, 1 slice of well done bacon and 3.5 ounces of hashbrowns.  I only used about 1/2 teaspoon of oil and the rest was Pam. Then Tony brought me a piece of his breakfast – his eggs are always so good.  it...

Crab Fest 2008!

Oh my gosh, last nights crab was so good!  But first, we finally got our wood delivered – TWO AND A HALF HOURS LATE!  She just drove the truck in our drive and dumped it and left. Hannah was up for the challenge and actually stacked ALL the wood herself!  Here is her lumberjack face: All done! While she was working, Tony and I split a...

I forgot!

To take a picture of my lunch.  I had it all set up, went to get the camera, remembered I hadn’t taken my insulin yet, and then completely forgot!  Since we are still waiting for the wood to show up, we sent Hannah on a lunch run.  Tony got hot dogs, Hannah and I split a plain gyros, and we all split one large fry....

Best Pancakes EVER!

I woke up this morning craving pumpkin pancakes, and I don’t even know if I’ve ever made them before.  I asked Tony if he would like some:  “No!”  I asked Hannah if she would eat some: “Yes!”  So it was two against one!  I should preface to say Tony rarely eats breakfast! But before I get to the recipe and pics, Tony WON again in...
