Open Face Burgers

We had such a late lunch that we ended up not eating dinner until almost 8:30!  I saw a recipe for open face burgers with horseradish sauce and thought it would be good and quick.  Tony doesn’t like horseradish, so I left that off of his.  My sauce was 2 tablespoons fat free sour cream mixed with 1 teaspoon of horseradish (this is strong, so beware!)...

Good Ole Apple Pie

The individual pies turned out great!  We haven’t tasted them yet – but from the looks of them, they are amazing! The pie crust recipe I used was found on www.pioneerwomancooks.com – look in her holiday folder and its in there.  I only made 1/2 a recipe since I only had pie crust on the top. Um, this is NOT LOW FAT.  That’s why I...

Winter is coming. . .

and I am not quite ready for it!  When I took Ed on his walk this morning, I thought, its not too cold today!  But half way to the river my ears about froze!  And the river is starting to freeze by the beach. Breakfast was quick and simple – 1/2 bagel sandwiches.  I didn’t have any apples with mine, we had popcorn before bed...

Two all beef patties, special sauce, lettuce, cheese, pickles (no onions!) on a sesame seed bun . . .

Okay, that title is a mouthful!  I thought I would make a Big Mac pizza last night but was very disappointed!  Here are my ingredients: I seasoned the beef with salt, pepper and A-1 sauce.  The base was thousand island dressing.  I did love my dough though!  Here’s how it looks in just 5 minutes: Here is how it looked out of the oven: Then...

Oh no. . . almost out of homemade salsa!

I brought two of my chimichangas from last night and heated them up in the toaster oven – they came out really crispy!  Since I used the rest of my enchilada sauce last night, I went down to the basement to get a jar of homemade salsa that I canned.  If you don’t know the process, click on the “my garden overflows. . .” page...

No walk for Ed!

When I left the house to take Hannah to school it was 13 and the radio said the windchill made it feel like 2 degrees!  It’s days like today that I am thankful I don’t have to take the train downtown to work anymore! When I got home, I let Ed out in the backyard, and all he did was go to the bathroom, run...

BSI Pumpkin Recipe: Baked Pumpkin Donuts with Cinnamon Honey Frosting

I was torn in so many different directions with this ingredient.  Do I try to do savory, or submit my pumpkin pancakes previously posted?   Then it dawned on me – what about pumpkin donuts! I’ve made donuts before – but simple method.  Roll out refrigerator biscuits, cut a hole in the middle, deep fat fry until they float and then toss in sugar/cinnamon combo.  Easy,...

Chimichanga = yum!

I saw a recipe for this recently while internet surfing, but the one I saw was deep fat fried and loaded with cheese.  Delicious, of course!  Healthy, not so much. So I ended up with this baked chimichanga recipe.  Not only is it delicious, but each one comes in at: 183 calories 5.9 fat 20.7 carbs 1.5 fiber 10.9 protein Here are our ingredients: 12...

Lunch Plan B

I brought stuff to make stir-fry for lunch, and as I am walking into the kitchen, it dawns on me.  I AM OUT OF STIR-FRY SAUCE at the office!  Nertz!  Well, there was some soy sauce in the fridge.  But I needed something else.  I asked my friend “taste this dressing and see you think it would work as a stir-fry sauce.”  Her response, go...

Free food

I brought my blueberry/apple/granola oatmeal, but then someone brought in bagels!  I ended up toasting 1/2 asiago cheese and had that on the side with a shmear of reduced fat cream cheese. A workout is in the plan for lunch, um, especially since I went WAY over last night on our date night – so worth it though!  See you at lunch!
