While I know there are mini cinnamon rolls with two ingredient dough out there, I hope that you try my mini cinnamon rolls with skinny pizza dough! You can make mini cinnamon rolls from scratch!
Sunday morning I had a taste for cinnamon rolls. I haven’t had a true cinnamon roll in ages, and when I looked through my blog to see if I had made them (I was sure I did because my step-son LOVES all things cinnamon) turns out my recipe calls for a stick of melted butter, and a cup of brown sugar.
I took two ounces of my Skinny Pizza Dough and decided to make one sweet treat and one savory. Today I am showing the cinnamon rolls, because they were the star of the plate.
Roll out the dough pretty thin, then spread 1/2 teaspoon butter over the dough, a teaspoon of brown sugar and a few pinches of cinnamon. I rolled it up, then cut it into three pieces and baked at 425 for 10 minutes.
The glaze is made of powdered sugar and milk, and used 1 teaspoon of the glaze for the cinnamon rolls. These were perfect – a bit of a crunch on the bottom where the brown sugar caramelized, and soft on the inside. If I wasn’t meeting my Mom for lunch, I would have made more right then and there!
Whenever you make a batch of skinny pizza dough, remember that there are lots of things you can make with it – including these cinnamon rolls!
Mini Cinnamon Rolls
Be sure to save some of your leftover skinny pizza dough to make these mini cinnamon rolls!
Ingredients
- 2 ounces pizza dough
- 1/2 teaspoon butter, softened
- 1 teaspoon brown sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon powdered sugar
- 1 teaspoon unsweetened almond milk
Instructions
- Heat oven to 400.
- Roll out the pizza dough into a rectangle.
- Add softened butter, brown sugar and cinnamon.
- Roll up from the short side and cut into three pieces.
- Place on baking sheet and bake for 10 minutes.
- Mix the powdered sugar with the almond milk.
- Once the cinnamon rolls have cooled a bit, drizzle with glaze.

On my WW plan (as of 2022) these are 6 points. These are also best within a few hours of making.

It made me giggle to see the saying on the make up bag below the “brownie” you were handing to Hannah. Happy to hear on Insta Story that you redeemed yourself. It will be interesting to see what your final recipe looks like. Glad you were able to get a new car taken care of. I need to do that too but I HATE going on the weekends. Your mini cinnamon rolls are too cute. I’m safe from them as I’m not a huge fan. I find cinnamon rolls to “doughy” for me. I know, I’m broken, who doesn’t like cinnamon rolls.
My Aunt who is in her 70s gave me that back a few years ago and I love it – has all my insulin stuff, pens, test strips etc. On the other side it’s all flowers and I didn’t notice the “fuck” side until a few days after I used it! 😛
Hannah isn’t a fan of cinnamon, but she liked these, and because they are so small, they aren’t very gooey on the inside like regular ones.

We were just talking over the weekend about how the vehicles we currently own will probably be the last we ever own outright as we plan on leasing in retirement. My boss leases all the time and I think the best thing is that you get to pick a new car every few years.
The only time my grocery list gets stuck to is if I send it with Mr. Helen to do the shopping lol!
Right? Lower maintenance on leasing cars, and you can usually get a much nicer car than if you were to buy it. Because leased cars are only kept for 3 years, they need the resale value and usually have more bells and whistles than you’ll ever need – like my steering wheel heater (although a couple weeks ago I would have killed to have that!). Also, you can negotiate the amount of miles you will use – I did 12k, because I probably won’t come near 36k miles in 3 years, but my last car I was still driving to work, so I negotiated 15k a year for an extra $7 dollars a month.
And Tony was to worst at shopping lists – I could give him three things to pick up and he nearly always spent $75!
I love the idea of leasing/renting things when you don’t want to maintain. My husband and I bought a house 2 years ago and hated maintaining it; we sold it quickly and are renting again and are so much happier. (Oddly enough, I don’t mind maintaining a car but I hated doing it for a house.) I read an article recently about how people are happier when they spend money on things that make their lives easier. Totally worth the slight difference in payment if it means you are worry-free.
You’re not the only one who goes into a grocery store with a $10 list and comes out with a bajillion things. Happens to me every time 😛
See, I am the opposite, I don’t mind maintaining the house, but a car – nope!!
That’s Hannah and I also at Target or Walmart – we’ll have a few things to get and next thing you know we are getting a cart, and when we get to the register realize we’ve been there two hours 😛

We rented a fully-loaded Nissan Murano for our drive to North Carolina last month and it was very nice, especially that heated steering wheel when it was 9 degrees! I think you’re doing the right thing with leasing; car troubles are so stressful, so this way you get to avoid that!
