Their chocolate granola is gluten free, nut free and vegan.  I thought for sure that I’d be able to make a vegan muffin, but I couldn’t figure out how to not use eggs and Greek yogurt.

So these cherry chocolate muffins are gluten free and nut free.  And delicious!!

I’ve had really good luck with Bob’s Redmill 1 to 1 Gluten Free baking flour.  It’s the base of my awesome gluten free pizza dough that I swear no one will know is gluten free.

The vinegar mixed with the oat milk turns into a mock buttermilk – its really good.  I rarely buy buttermilk when I can make my own – its typically 1 tablespoon of vinegar to 1 cup of liquid.  Since I was using only 1/2 cup oat milk, I used 1 teaspoon.  Letting it sit 5 minutes is key.

I really love this granola.  It’s not overly sweet, which is why I love it.  

I am so happy I got a new muffin tin – why I have procrastinated I have no idea – my daughters mother in law and grandpa in law gave me a Bed Bath & Beyond gift card for my birthday – thank you!  It’s Wilton brand and non-stick – love.

These taste like pound cake to me, and I have no idea why.  Jacob didn’t think they were chocolately enough – he said I should have added chocolate chips, but since I don’t like too sweet of stuff (except gummy bears!) I loved them.  And it’s all about me, right?!

I love the bit of acidity you get when you bite into the dried cherry – so good!

In other news, I was up 1.8 this past week.  It’s funny, the weeks I think I am killing it, I gain, the weeks when I expect a gain, I lose.

It’s all good – I’ve upped my exercise doing Orange Theory, and it was everyone’s consensus that I didn’t drink enough water.  I tried drinking a gallon of water over the weekend, and the closest I got was 90 ounces.  I’ll have to work up to that!

Speaking of Orange Theory – I love it.  I was trying to figure out what the classes are that I sign up for, and I was told that you don’t know.  You just show up and see what you get.

I went to a class on Friday afternoon and then again on Saturday morning.  I don’t recommend that – I was really sore yesterday!  But the hour goes by so fast!!  The instructors are awesome too.

They want you to be in the orange and red zone for at least 12 minutes of the hour – me??  I am mostly in the green zone – which is fat burning, but they say that the orange and red zone is what continues to burn fat 24 hours after you work out. 

I am fine being in the green zone though – I have to remember that I am 51, not 25 like the rest of the people in the class šŸ˜›  

But my final 30 second push on the treadmill?  At a 6:40 minute mile pace!!

Granted, I could only run that pace for 30 seconds, but without the instructor saying “give it all you got!” I never would have even tried that pace on my own.

And here we are back to Monday!  Since I had that bonus day on Friday off from work, it makes all the difference.  I spent so much time in my kitchen – some great recipes coming your way this week!

So much goodness.   I can’t imagine how much I would cook if I didn’t have my day job!  I’d have to open up a pop up restaurant to give away all the food.
