I had the best weekend – doing what I love – grocery shopping, cooking – and now videotaping and editing!  I learned so much this weekend.

And in case anyone is wondering, Meijer grocery stores in Chicago sells Certified Angus Beef  Â® brand.   I could have spent all day at Meijer there – it’s huge!

I’ve been hesitant to do videos just because quite simply, I didn’t think I would be smart enough to figure it out.  Not kidding.  So I never tried.  But when I had an opportunity to do one for Certified Angus Beef  Â® brand, I knew it was just the shove in the right direction I needed, and guess what – I figured it out!

After working pretty much all day Friday and Saturday, Sunday my roommates and I went on a mini field trip to a new deli/butcher shop.  Jacob’s grandpa is working there and yesterday was their soft opening.

Hannah should be the fashion blogger – loved her outfit. 

Jacob’s Mom came too – she was in town (she lives closer to the city).  How cute is that downtown area?!

Jacob’s grandpa was a butcher for decades, then “retired” and worked at home depot.  He retired from there, and is now back to being a butcher!  He looked right at home there.

Hub Market is also a place to have sandwiches, and they will have alcohol too.  The place smelled so good with the panini maker.  

There I am with a bag of meat!  Ha – we didn’t go too crazy.  A pound of bacon, a couple burgers, some knockwurst and a loaf of good bread.

We will definitely go back for lunch.

After that Hannah and Jacob had plans for lunch with one of their friends.  They dropped me back off at home – I’ve had a taste for chicken wings for a while now, and since I picked up chicken breast off the meat bin, these buffalo chicken bites were quick, easy and so hit the spot.

Buffalo Chicken Bites

Yield: 1 serving
Prep Time: 5 minutes
Cook Time: 6 minutes
Total Time: 11 minutes

These buffalo chicken bites are super easy to make. Pan frying in just a touch of grapeseed oil makes these extra crispy.

Ingredients

  • 6 ounces chicken, cut into bite sized pieces
  • 1 egg
  • 1/4 cup almond milk (or milk of choice)
  • 1/3 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon dried parsley
  • avocado oil spray
  • 2 tablespoons hot sauce (I use Frank's buffalo)

Instructions

  1. Mix the egg and milk together in a bowl.
  2. In another bow (or paper bag)l, mix the flour, salt, pepper and parsley.
  3. Dip the chicken in the egg mixture, then flour mixture.
  4. Repeat and dip again the in the egg mixture, then flour. Double dip! Make sure the chicken is well coated.
  5. Heat skillet with avocado oil over medium heat. Add additional avocado oil spray as needed.
  6. Cook the chicken 3 minutes a side, or until cooked to 165.
  7. Toss in the hot sauce, or if you don't like spicy, just leave plain for mini fried chicken bites.


Alternatively, you can airfry at 400 degrees for 10-12 minutes.

In one bowl I have one egg, 1/4 cup of unsweetened almond milk and pepper.  In a second bowl I have 1/3 cup flour, 1/2 teaspoon salt, 1/2 teaspoon pepper and a teaspoon of parsley.  And the hot sauce was just two tablespoons of Frank’s original hot sauce.

Simply dip the chicken in the egg/almond milk mixture, toss in the flour mixture, then pan fry in a tablespoon of grape seed oil (I did these in two batches).  Since the pieces were small, it only took about 3 minutes per side.  Look at that crunch!

I didn’t have any celery, so I chopped up some cucumber.  I was also out of ranch dressing, so I used tzatziki for dipping, which I loved.

These were crunchy from the flour mixture, super tender and juicy.  I could literally have that for dinner every night and not get sick of it.

The only points is the flour and the oil – I didn’t even use all the flour, but am calling it 3 points for the flour, and 2 points for the oil – I imagine a teaspoon of oil in each batch was absorbed into the chicken.

Um, I may have eaten them all!

My mouth is watering just looking at these. 😀

UPDATE:  I recently got an air fryer!  Simple Living Products sent me their 5.8 Quart Air Fryer.   I made the same recipe, except sprayed the chicken with Pam before putting it in the air fryer for 8 minutes at 380, then flipped and cooked for 3 minutes at 400 degrees.

Um, for the record, I’d like to have every Friday off – it  made the weekend so much longer and it was the perfect balance between productive and relaxing.  I took a TWO hour nap yesterday!  It was amazing.

And here we are back to Monday – a couple full weeks and then two four day weekends in a row – I’ll take it.

Show of hands how many of you have started Christmas shopping?  I tend to be a last minute shopper – I end up spending less money that way.
