Thanks for all the comments about my fall in yesterdays post. I am happy to report that the swelling has gone down, I can bend it farther than I could yesterday and I think one more rest day and I should be good to go. I have been popping the ibuprofen and icing it which helps.
Yesterday for breakfast I had an open face egg sammie – 1 slice of corned beef, baby spinach, an egg and 1/2 ounce of cheese with the best blackberries I’ve had all year.
There were only a few people around for Souper Friday yesterday. I was fine with that because then I’d have leftovers for the weekend and my SIL’s lunch next week. I tried to make a broccoli corn bisque. I basically put two cans of drained corn in a stock pot, chopped up 2 good size heads of broccoli, added vegetable broth and put a lid on it and let the broccoli cook through.
I removed the soup from the heat, added crushed red pepper, salt, pepper and then used my stick blender to blend. To finish it off, I added 3 cups of unsweetened almond milk and put it in the fridge to take to work.
First rookie mistake. I never tasted the soup the night before.
Second rookie mistake. I never heated it up before and tasted it.
After I had it in the crockpot for a couple hours and it was hot, I tasted it. ICK! The corn was so sweet, then paired with the unsweetened almond milk. I tried adding more crushed red pepper. It was really runny, so I went across the street and bought a $1 container of white rice. It pretty much tasted like ass.
I gave some to my boss to try to see if it needed any more salt. He said “I think its fine.” After I ate about 3 or 4 bites of this, I went to him and said “this soup tastes like ass” and he said he knew, but he didn’t want to hurt my feelings! Super nice, but I have thick skin, I can take it. Although two other people tasted it and liked it, so who knows! But no amount of cheese on top was bringing this around. I know I can’t hit a home run every week, but this was disappointing.
Tony and I decided to have tuna for dinner. I told my sister about it and she about threw up in her mouth. But guess what? She’s never tried it before! I wrote it before, but the first time Tony made me tuna, I made him cook it so there was no pink at all – basically ruined a perfectly good tuna steak!
I toasted up some sesame seeds and coated the sides of the tuna. You need a high heat, add a touch of olive oil right before putting the tuna down, and literally only cook it 1 to 1 1/2 minutes a side. I almost cooked it too much! Tony made a quick sauce – not sure of the proportions, but it was rice vinegar, soy sauce, wasabi paste and I added a touch of honey. Served over rice and I had some sauteed zucchini on the side.
This was frozen tuna that Tony thawed in the afternoon – the package of two steaks cost $10, but to order that dish in a restaurant would easily be a $30 dollar dish.
And to show that you don’t need a fancy camera to take good pictures, I took this picture with my iPhone to message to my sister – not bad!
And as is customary for Friday nights, I had a bottle of Fat Tire.
This morning Tony and I slept in, watched some baseball on t.v. and finally around 11:30 I decided to make coffee and make brunch. On the menu? Corned beef hash! Oh how I love corned beef. I really don’t know why I don’t buy it more other than around St. Patrick’s day?!
No real recipe, just dice up the corned beef and cooked potato about the same size and cook with a touch of olive oil.
I made Tony a poached egg, because he loves a runny egg (ew). Boil water, and right before adding the egg pour in a tablespoon of vinegar. Stir the water around the outside of the pan so the egg whites stick to the yolk. Two minutes is all this needs.
This is a shitty picture, but you can kind of see the runny yolk! Thanks for being my hand model Tony!

I have to give a shout out to blog reader Louise. She makes greeting cards on her Etsy shop page, and she was kind enough to send me my first birthday card – my birthday is next week – I’ll be 45 – gah! Thank you Louise, it’s beautiful!
I love lazy Saturday mornings, but now I have to get my ass in gear. Menu planning, grocery shopping, cleaning. One of my co-workers is running a half marathon tomorrow in our town so I am going to get up early tomorrow and try to get a picture of him – he did the same race last year and I never saw him run by!
And Tony’s sister, nephew and grand-nephew are coming over tomorrow for Sunday dinner – we’ll be able to sit at the dining room table! That makes me really happy.

Your tuna sauce sounds similar to the sauce I just used on my hailibut – lime juice, honey, soy sauce, wasabi, ginger, and garlic. It was delicious! I bet it would be great on any seafood 🙂

The tuna looks like it was cooked perfectly. I prefer the pink and warm center over a pink an cool center. Either way, a tuna steak can make a great dinner. And to top it off with a Fat Tire. It doesn’t get much better than that. But then, Fat Tire goes good with dinners the other 6 days of the week.
I hope you’re feeling better. I read about your fall, but I’ve been reading more from my phone and for some reason I can’t comment. I don’t have a very thick skin and when I was dating my husband I made a pot of rice. I was still somewhat new to making rice that didn’t come in a box. It came out terrible and he told me so. I picked up the pot, dumped it in the trash and went into the bedroom to cry! We’ve since managed to find some middle ground and my skin is a bit thicker these days. Nonetheless I’m sorry your soup didn’t turn out. I hope you’re enjoying the weekend.

My daughter and her boyfriend cooked tuna for me for Christmas dinner and I loved it 🙂 Ralph not so much! But that’s o.k I’d eat his portion any day.
I love runny eggs! Only the yolk, though. The white has to be completely cooked. Weird, I know 😀

I hate it when a recipe I try fails. I tried a tikka masala soup that was just tolerable. I was so disappointed. I have never been tempted to eat tuna like that. Raw fish gives me the shivers. Ugh. I know I’m probably missing out on something good but still…..
I know it sounds weird, but once you get over the look of how rare it is, it doesn’t taste raw – I don’t even like many fish, but I LOVE tuna!
