Yep, my office is closed for Good Friday today, and I am proud to say that I woke up at 10:45!! 😀
I’ve really lucked out on buying the best oranges! They were so good, I ate the oranges before my breakfast sammie!
Any my typical egg white/spinach/ham sammie:

I bought the WW 1-point pita breads and I am a bit underwhelmed. I was trying to figure out a way to use them up when I decided on my go to – pizza!! While you only see one on this plate, I had one pizza earlier – each one is only around 150 calories! I split up my lunch before and after my workout – worked great!

We decided to grill bone-in chicken breasts on the grill. A quick search on Tastespotting, and I found the most amazing glaze for my chicken: Orange Chipotle Glaze! I adapted it from here (great food blog by the way!)- I left out the onions, reduced the amount of jelly (and used my homemade pepper jelly) and added a touch of water to mine. Here is a printer friendly version of mine. Here is a picture of my glaze – I probably used about a tablespoon on my chicken – this one is a keeper!
Chipotle Orange Glaze
Ingredients
1/4 | cup orange juice |
1 | teaspoon lemon zest |
1/4 | cup jelly |
1 | teaspoon cornstarch |
1 | chipotle pepper |
1/2 | teaspoon salt |
Directions
Mix all ingredients into a skillet – simmer until the sauce thickens – about 3 minutes. Use as glaze on grilled chicken or pork.

Whole recipe: 280 calories, .3 fat, 68.7 carbs, 1.8 fiber and 1/7 protein.
So while I knew Tony wouldn’t touch my glaze with a 10-foot pole, he decided to just use regular bbq sauce. Only one slight problem. All the bbq sauce’s we had in the house started out with:
- fire ass bbq sauce
- habenero bbq sauce
- jalapeno chipotle bbq sauce
- burn your lips off bbq sauce 😀
So he did a quick Topeka search 😀 and found a recipe that turned out really good. You can find a printer friendly version here. I made sure to use two separate brushes so Tony didn’t get any of my spicy glaze!
Simple Barbecue Sauce
Ingredients
1 | cup ketchup |
1/4 | cup cider vinegar |
2 | tablespoons molasses |
1 | tablespoon dijon mustard |
1 | tablespoon water |
1/2 | teaspoon salt |
1/2 | teaspoon black pepper |
Directions
Combine all ingredients in sauce pan – cooke over low heat for 5 minutes. Baste the meat, chicken, or seafood with the sauce during the last 10 minutes of grilling.
374 Calories, 1.4 fat, 92 carbs, 1.5 fiber and 5 protein for whole recipe.

And while the grill was getting to temperature, Tony and I relaxed in the beautiful weather with chardonnay. 😀
I did corn too, but it was taking a long time, so we started out with the chicken and asparagus.


And Hannah had to teach Maxi about smores! Maxi said she wasn’t a huge fan of marshmallows, but she’d try it. She ate two! 😀

We are having crab fest with our neighbors tonight. I also have plans to attack my closet in the basement – I believe my husband and daughter want to have an intervention with me because I am unable to wash clothes, dry clothes and put them away. So I have mounds of my clothes on a table that usually is reserved as a folding table. Wish me luck!

That’s so funny because my husband won’t touch fruity, spicy glazes either. I LOVE the sound the chipotle glaze. It totally makes me want to grill 🙂
I had good friday off too! It was splendid. Although my good friday did not include smores. I’m jealous!
