Did you see all that shit I ate last week?  From the cheese and salami tray on our date night last Tuesday, to that amazing chicken sandwich with onion rings and Southwest ranch dressing, I am down –0.4!  Yep, I will take that loss because now I weigh exactly:

So fricken close to the 150’s!  What was my saving grace for not having a gain last week? EXERCISE! I worked out at least 60 minutes every day except for Thanksgiving.  😀

We have motion lights around our house, so when I came home, I didn’t see it at first.  I came inside and saw a box, and Tony said “didn’t you see it?”  I looked all around outside and didn’t!  We walked around the side of our house and I saw this:

I don’t know how to take pictures in the dark, but its an LED snowman that runs on two batteries.  You press a button and it stays lit for 6 hours, turns itself off for 18, then turns itself back on.  I LOVE IT!  Thanks you Tony – I love you!

Last night while Tony, Hannah and Joe watched Dexter (I just couldn’t get into it!) I made my breakfast:  a canned sliced potato, shredded zucchini, goat cheese egg beater frittata!  The potatoes were on sale for .50 cents a can!

Then I added a tablespoon of this over the top:

In a non-stick pan that is oven safe, spray Pam, then layer 2/3 cup sliced potatoes, 1 shredded zucchini that has been squeezed dry, 1/2 ounce of crumbled goat cheese, bacon bits and then pour in 1 cup of egg beaters.  Bake at 350 for 30 minutes.

Photography Hint: Okay, so I still really don’t know how to use everything on my camera, but I took the above photo using the “sport” setting to catch the pour.  I think its a neat trick! 😀

My breakfast was 1/2 of the frittata, 1/2 Fuji apple with a dip made up of 1/4 cup Greek yogurt, 1 tsp. agave nectar and 1 tsp. reduced sugar peanut butter – I love this dip!  Um, and Tabasco was necessary on my frittata 😀

Next up was my take on Kevin’s Turkey Pho Soup for One!

Biz’s Turkey Pho Soup (adapted!)

  • 2 cups chicken broth
  • 1 tablespoon clam sauce (he called for fish sauce but I didn’t have any)
  • 1/2 tsp. brown sugar
  • 1/2 sliced jalapeno
  • 1 clove
  • 1/2 cinnamon stick
  • 1 chunk of fresh ginger
  • 1 tsp. peppercorns
  • 1/2 cup diced turkey breast
  • 1 cup noodles
  • 1/2 cup bean sprouts
  • garnished with fresh cilantro, sliced jalapenos and lime
  • forgot my chile paste sauce at home for the top 🙁

Put chicken stock in pot, add clam sauce, brown sugar, sliced jalapeno, clove, cinnamon stick and ginger and simmer for 30 minutes.

Strain the solids so you are just left with the broth.

These noodles are fully cooked so I just added them to the broth along with the turkey breast.

While some people can’t handle the texture of these noodles, I love them!  And the best part?  Zero calories!!

Then at work, I assembled it all together.  Lunch comes in at 3320 320 calories, 6 fat, 21 carbs, 44 protein and 3 fiber:

The only thing missing was the red chile paste to mix in!  So I added some Tabasco to the broth and got it at the right heat level.

 

Even though I did level 3 of Jillian’s 30-day shred before work today I still wanted to do something at lunch.  One problem!  My blood sugar was 59!  Unfortunately I was a bad diabetic and had run out of glucose tabs (to raise my blood sugar quickly).  They taste like sweet tarts, but only have 10 calories.  So I had to resort to this:

I seriously can’t remember the last time I had a candy bar, but this was so good!  It tasted like a cross between a butterfinger and a kit kat!  With eating that AND 1/2 a fuji apple, I was finally at a number I could work out at.  My snacks were: 248 calories, 10 fat, 39 carbs, 3 protein and 3 fiber.

On tap for dinner was Italian Beef’s that weren’t eaten during football yesterday!  I love this Italian gravy that comes with each pound of Italian beef purchased:

And only 20 calories per 1/4 cup – just enough for dipping!

I sauteed some red and green peppers in about 1/4 cup of the gravy, basically just to steam them.

And Tony bought the best rolls!   Each one is 310 calories, so I opted for 1/2 a sammie.

I cut up 2 small potatoes for fries on the side.  My plate: 15 french fries, 1/2 soft sub roll, 1 ounce of mozzarella cheese, 2 ounces Italian beef, 1/4 cup gravy for dipping!  Dinner comes in at: 479 calories, 15 fat, 48 carbs, 26 protein and 3 fiber.  HOLY YUM THIS WAS DELICIOUS!

  • 105 protein
  • 11 fiber (still not enough!)
  • 25 minutes of Level 3, 30-Day Shred
