South Beach Taco Soup

South Beach Taco Soup
I have to say that I much prefer the South Beach diet over Atkins, it allows you to eat complex carbohydrates, like kidney beans, and no taco soup is complete to me without them! South Beach Taco Soup 12 ounces cooked shredded chicken 1 tsp. olive oil 2 tsp. minced garlic 4 cups beef broth 1 28 ounce canned tomatoes (I used Muir Glen) 1...

Spinach Jalapeno Egg Wrap!

Note to Self:  If you want to work out in the morning before work, you need to go to bed before midnight! But I am working out at lunch today come hell or high water! I confessed to Tony this morning that I kind of cheated – I had these low carb wraps in the fridge and I was dying for an egg sammie!  Although,...

BBQ Beer Chicken with Broccoli Gratin

Dijon mustard black pepper to taste 3 tablespoons Parmesan cheese 1 ounce shredded cheddar I cooked my broccoli in...

Plan B

I had on the menu Creole Fried Fish with Parmesan Zucchini coins – only one problem – I opened up the fish package and it STANK to high heaven!  I’m pissed because I bought it fresh on Friday, and today was the sell by date!   Tony was hungry and we still had to drop off one of our cars for service, so the only thing...

Beef Cobb Salad

I love cooking beef to rare, because then the leftovers don’t get overcooked!  I heated up 3 ounces of the beef from last night, and made a big salad – I used a tablespoon of my cucumber dressing and a tablespoon of Annie’s goddess dressing – great combo! On the side was a cup of roasted red pepper soup – with lots of dashes of...

Roast

The roast was delicious last night and all I used was Weber brand “Gourmet Burger” blend on the outside.  It cooked on the Weber in indirect heat and took about 90 minutes to get to rare – this roast was almost 6 pounds! Ed just liked being outside – we like to put up his ears and say what?? My pedicure yesterday was so relaxing...
