I had on the menu Creole Fried Fish with Parmesan Zucchini coins – only one problem – I opened up the fish package and it STANK to high heaven! I’m pissed because I bought it fresh on Friday, and today was the sell by date! Tony was hungry and we still had to drop off one of our cars for service, so the only thing readily available was to make burgers!
All together dinner comes in at 531 calories, 39 fat and 4 carbs. One thing I have noticed in this South Beach diet is not only how much less insulin I am taking – today for example I only had 29 carbs all day – but my meals have a higher percentage of fat and I am not getting any where near the amount of fiber I was getting – I may need to start supplementing! Do you supplement your diets with vitamins you don’t get in your diet?

Sorry about the fish 🙁 That would not be fun to deal with!! I take a multi vitamin and a calcium supplement but that’s it. I did take iron for a while because I’m a little anemic but that was almost a year ago. I’m also supposed to take an omega 3 but I forget!
By the way, J&K is on hiatus until August so they can “recoup” basically – I’m bummed because I love the show but they need to do some serious damage control, you know?!

I am always terrified of food poisoning- the good thing about fish is that you can tell straight out when it’s gone bad! Burgers look delicious by the way 🙂
I take a multivitamin, calcium and fish oil supplement. I eat a lot of dairy and fruit + veg, but not red meat so worry about lacking in iron/zinc. Better safe than sorry!
Remember, the SBD is not low carb, it is good carb. A lot of people, including Dr. Agatston, recommend eating at least two cups of vegetables daily — even on phase one. That will help with your fiber. Once you go to phase two, you can choose to add a whole grain, such as steel cut oats, which will also help.
Yep – I added veggies to my lunch today to up the fiber – I am also going to be making a taco soup with kidney beans – the beans are approved in all phases! 😀
Seriously, girl how do you eat such low calories?!?! Is there a trick you can share with us? I would be starving and cranky all day methinks 🙂
Before SB I was at around 1500 calories – and suprisingly, I am not hungry between meals!
When I lived alone I wasn’t really responsible in my eating habits. I never ate breakfast, would eat crap stuff for a few days like Ramen or hot dogs, etc. so I took daily vitamins b/c I figured that I wasn’t getting enough. Now that I’m more responsible and out of that rebellious “I’m an adult, I can do what I want” phase I eat well-balanced meals so I don’t worry about it. Unless I’m sick, then I try to do the Vitamin C or wellness formula kind of stuff to hopefully kick it faster.
Basa tastes like nothing, I find, unless you add alot of seasoning to it. For someone who likes fish, it’s not my thing, but I can see how if you don’t like fish, it would be a good option.
I think if you are severely deficiant in a nutrient/vitamin, then you should look at supplementing if it’s not possible to change your food intake to make up for the loss. Especially if the way of eating is going to be longer term. But to be honest, it’s always better to get those nutrients/vitamins from natural sources if you can.
