So glad its Friday! This has seemed like a really long week for some reason!
Who has plans this weekend, or are you just going to relax?
We don’t have too much planned – lunch with my SIL and her grandson on Sunday, my step-son is coming out on Sunday too (hey Joe!) and my mom is coming over for a bbq on Monday.
Today’s egg white sammie was on the diabetic bread – so good!
- 1.6 ounce bread
- 1/2 cup egg whites
- crushed red pepper
- 2 oz. black forest ham
- .8 ounces pepper jack cheese
- sliced fuji apple on the side

My sister sent me this link yesterday – as if there aren’t enough blogs to read! But I like that these are weight loss blogs from people who are in the process of losing, people who have already lost it and are maintaining that weight loss, as well as some nutritional weight loss blogs.

Morning break is up – see you at lunch! I brought mystery soup and stuff to make a grilled cheese sammie – but I may end up getting a salad at our cafe – come back to lunch and see!
I’m actually in Iliinois this weekend to see my BF! We’re going to a lake Sunday since one of his friends is having a bbq and taking the boat out. I’m having a good time so far! Very relaxing! 🙂
I love Fuji apples, too!
Now that’s my kind of breakfast sandwich – it looks tasty.
Thanks for the link! I find apples change throughout the year, much to my frustration (but understanding) – I find one I really like, but after a couple of weeks/months they change into mushy/tasteless/floury things. I like Fuiji, but it often has a sort of brown centre? Maybe that’s just over here.
Pepper jack cheese goes really well with apples. I have things planned for tonight and tomorrow night so I hope to spend Sunday relaxing 🙂
why is it called mystery soup?
I forgot to label it! So it’s either: taco soup, tortilla soup, or chicken brunswick stew! I won’t find out until I defrost it! 😀
I like your breakfast combo! 🙂
Memorial day plan: outlet shopping!
I traveled a ridiculous amount last weekend, so this weekend I am staying put!
thanks for the cool link! im having fun clicking through some of these. not enough have pictures though!!! food pics are the best part 🙂
your breakfasts always make me want to go back home and make a second one for myself 🙂 i need to buy egg whites this week! do you do yours in the microwave?
Yep – 1 minute for 1/2 cup, then another 30 seconds after I put the delicious cheese on top to melt!
That bread looks so good! I love it when you can actually see oats or grains on the crust 🙂
Happy Friday!
