After yesterday’s breakfast, I knew I had to up the calories and protein to get me to lunch today! I ended up making a “pam” fried spinach, egg, ham and cheese quesadilla.
- 1 flour tortilla (mine is 190 calories)
- 1 egg
- handful baby spinach
- 1 ounce black forest ham (love it!)
- 1 ounce mozzarella cheese
It is such a beautiful day outside – glad my friend and I decided to do the shred tape every other day, so today is a 40 minute walk outside at lunch.
I chopped up some jalapeno pepper last night for my open-faced mock crab sammie for lunch, then reached to put my contacts on this morning and almost burned my eyes out! Guess there was some residual capsaicin oil on my hands! Luckily my contacts are daily’s so I just threw them out.
