A couple weeks ago I won the BSI recipe contest with Avocado Crab Bisque. My new friend Ruth from Plentiful Plants sent me a bunch of Canadian Loot!
I got up to work out this morning at the gym 😀 but when I tested my blood sugar, it was 50. So I grabbed one of Ruth’s bars and ate half on the way to the gym, with no insulin. It worked out great. I re-tested my blood sugar when I got to work and it was 112 – nice!
I ended up doing 35 minutes on the elliptical – I had to stop at the store on the way home to pick up some stamps and we were out of paper towels – I need to do a Sam’s run this weekend!
I am really looking forward to trying this from Ruth’s package:
Breakfast was going to be a steak and spinach/feta omelet, but it stuck, so it became an egg white scamble!
- 3/4 cup egg white
- 3 ounces leftover steak
- .5 ounce feta cheese
- 1 slice low carb rye bread
- 1 teaspoon light smart balance

You inspired me to make a tomato-swiss cheese fritatta this morning, much to my husband’s delight. 🙂 It almost became a scramble, though, because I had to change pans to put it under the broiler, and it stuck a little.
