A couple weeks ago I won the BSI recipe contest with Avocado Crab Bisque.  My new friend Ruth from Plentiful Plants sent me a bunch of Canadian Loot!

I got up to work out this morning at the gym 😀 but when I tested my blood sugar, it was 50.  So I grabbed one of Ruth’s bars and ate half on the way to the gym, with no insulin.  It worked out great.  I re-tested my blood sugar when I got to work and it was 112 – nice!

I really liked the flavor of this!  1/2 the bar was 100 calories and 15 grams of carbs

I ended up doing 35 minutes on the elliptical – I had to stop at the store on the way home to pick up some stamps and we were out of paper towels – I need to do a Sam’s run this weekend!

Breakfast was going to be a steak and spinach/feta omelet, but it stuck, so it became an egg white scamble!

  • 3/4 cup egg white
  • 3 ounces leftover steak
  • .5 ounce feta cheese
  • 1 slice low carb rye bread
  • 1 teaspoon light smart balance
