So this weeks BSI ingredient was a lot easier to work with, simply because I like it! That being said, I decided that I was going to come up with a recipe using only ingredients I had on hand. Easier said than done! Well, when I saw these guys, this was ingredient #1:
![p2280004-640x480 This happens to me more often than not! This bag of white potatoes got buried in my pantry - I simply cut off the eyes - they were still good!](http://biz319.files.wordpress.com/2009/03/p2280004-640x480.jpg)
![p2280005-640x480 Then I gently boiled the potatoes in salted water with two eggs. I did this step last night.](http://biz319.files.wordpress.com/2009/03/p2280005-640x480.jpg)
![p2280006-640x480 Once the potatoes were cooked, I put them in a bowl and stuck them in the fridge until this morning.](http://biz319.files.wordpress.com/2009/03/p2280006-640x480.jpg)
![p3010012-640x480 I may have added more Tabasco at the table! :D](http://biz319.files.wordpress.com/2009/03/p3010012-640x480.jpg)
![p3010007-640x480 These are the peppers I used - so yummy!](http://biz319.files.wordpress.com/2009/03/p3010007-640x480.jpg)
![p3010010-640x480 I pan fried it in Pam](http://biz319.files.wordpress.com/2009/03/p3010010-640x480.jpg)
![p3010013-640x4801 So good!! Dinner comes in at 584 calories (even though I didn't eat the corn in the background!), 23 grams of fat and 59 grams of carbs](http://biz319.files.wordpress.com/2009/03/p3010013-640x4801.jpg)
Chipotle Pepper Black Bean Potato Salad
- 15 ounces potatoes
- 2 eggs
- 2 tablespoons Dijon Mustard
- 1/2 cup sour cream (I don’t like mayo that much!)
- 6 ounces canned black beans
- 1 tablespoon chopped cilantro
- juice of half a lime
- 2 chipotle peppers in adobe sauce, chopped
- salt and pepper to taste
Boil the eggs and potatos until done. Let cool. Peel eggs and chop. Chop potatoes in quarters. Add sour cream, mustard, cilantro, black beans, chipotle peppers and salt and pepper and mix well. Sprinkle with lime juice and mix again. The best part is the nutrition! Each heaping 1/2 cup serving comes in at 100.5 calories, 2.3 fat, 15 carbs, 2.8 fiber and 5.5 protein! Sadly, I think I am the only one in my family who will eat this, but I think a couple of my friends at my office will like this!
Thanks to Nicole for being this weeks hostess!
And I found out that www.calorieking.comhas Sweet Tomatoes on there! So my lunch came in at 578 calories, 26 fat and 72 carbs.
Daily Totals:
- 1410 calories
- 59 cat oops! 59 grams of fat – nice catch Tony!)
- 163 carbs
- 68 protein
- 20.3 fiber
No exercise – we leisurely walked at the mall so I don’t think that counts! Off to clean the kitchen and watch Donald Trump’s Show tonight – that is a guilty pleasure of me and Tony to watch that show! See you tomorrow!!
![p3010008-640x4801 Even though these are packed in oil - it says 1/2 a jar is only 25 calories? Not sure I believe that though!](http://biz319.files.wordpress.com/2009/03/p3010008-640x4801.jpg)
The potato salad looks great!
Mmmm I love any and all kinds of potato salad – this all looks delicious!
I love the potato salad! And the burger looks fantastic too.
I love roasted peppers in everything! 😀
the salad looks delicious!
I love the creativity of this.
And what isn’t better with red peppers?
I had diabetes during my last pregnancy and it is sort of like being vegetarian, if you don’t get creative you will die of boredom. Also one of my favorites was a half bagel, cream cheese and fresh strawberries, etc. or any ripe fruit. That got me through.
black bean potato salad sounds so creative!
Whoa, roasted red peppers are awesome!!
Love it!
I have that happen to me also, and i too just take the eyes off and the taters are always still good to use. Fabulous looking salad my friend!!
What an awesome potato salad!
great use of the BSI!!!
That sounds delicious. I never thought of adding chipotle with potatoes.
LOVE your recipe! I can’t wait to try it out myself!
Your first photo cracked me up because I JUST posted a similar photo on my blog of my whacked-out potato! I’m glad I’m not the only one this happens to. Also good to know I can still eat the rest of it. I was about to toss it.
I love Chipotle anything, so your recipe looks great. Nice job!
This looks great, and I love making things out of whatever is on hand. That often includes sprouty potatoes in my kitchen as well! I will update the post in a second. 🙂
