So since my doctor wanted me to stay home from work today, I had more time to put my breakfast together. I started out by Pam/oil frying (about 1 teaspoon oil) one serving of frozen hash browns. I cooked them just until the bottom got crispy. Then I poured in 1/2 cup egg whites, a couple tablespoons of diced red pepper, handful of spinach and 1/2 ounce Mexican cheese. I then put this in the oven at 350 for about 10 minutes, or until the cheese melts.
My breakfast came to: 357 calories, 13.2 fat, 39 carbs, 7.1 fiber (nice!) and 19 protein
So I feel about 50% better than yesterday. Still coughing but it doesn’t hurt as much, so that’s good! Off to get under my comforter and rest. See you later!
that looks FANTASTIC! feel better soon!
Love your blog!! Quick question, I’ve seen that you melt cheese on top of your granny smiths before and was just wondering if you think havarti would be a good cheese to do this with? Hope you are feeling better and thanks in advance!
I think any cheese goes good with that apple combo – even havarti! Thanks for stopping by!
