Hannah and I are both feeling better, but it’s remarkable how much better Hannah is because she’s got so many medications, from prednisone – which was Tony’s favorite drug, well, right after dilaudid. I remember the first time he took prednisone and he was walking everywhere, getting in and out of cars with no problem. The only downside is that you can’t take prednisone as a maintenance drug – we were so bummed to hear that because it helped Tony so much. Hannah even went back to work yesterday! Ah, that’s youth for you – you bounce back a lot quicker. I am getting my flu and pneumonia shots this weekend though.
Yep, I had another breakfast panini – this time using a lone hamburger bun I had left that needed to be used up. And I am not usually a plum person, but this one was delicious!
I had to do a Sam’s Club run for work and Portillo’s is right in front of Sams. I decided to pick up their chopped salad – Hannah raves about it. I wasn’t sure about the dressing calories so I asked for it on the side. Good thing I did because while the salad was 393 calories, the salad dressing is 250 calories a serving! I ended up using 2 tablespoons of Annie’s goddess dressing – love, loved this salad.
I ended up finding this at Sam’s Club:
It was $9.39. I remember trying PB2 back in 2009 and liking it, so hoping this is as good, if not better. I would love to add it to smoothie’s for a peanut butter taste but without all the calories and fat of peanut butter. Have any of you guys tried this before?
I subscribe to The Woks of Life and yesterday in my email box was a recipe for Korean Chicken Fingers. Huh. Doesn’t this picture make you want to make it??!!
I had all the ingredients except Korean chili powder – it called for 3 tablespoons, which I think would have been too spicy for Hannah so I used 1 tablespoon of regular chili powder, 1 teaspoon dried ginger and 1 teaspoon paprika with salt and pepper. You double dip them so they were extra crunchy. I had just cleaned out my deep fryer so these were not greasy at all, the batter stayed on and it was perfect next to fried rice. I still can’t get fried rice to taste as good as Tony’s!
These pictures do not do this chicken any justice – hello again to my awful fluorescent kitchen lighting! The chicken was perfectly cooked – still juicy, crunchy. I did make a different dipping sauce of equal parts honey, teriyaki sauce, and Chinese hot mustard. I could literally eat that dinner every night and never get sick of it.
But, I need to get back on track. I am nearing the end of week two with no exercise because of my bronchitis, my meal plan hasn’t been the healthiest and I know I am not drinking near enough water – I woke up so thirsty this morning. I am hopeful that by Monday I’ll be able to get back to working out – even if it’s just walking, I’d be happy with that. I am also going back to the carb cycling – I liked eating the smaller meals and especially eating a smaller dinner.
I woke up this morning thinking it was Saturday – oh well, I told my bosses yesterday that I felt like working just one more day, and then I’d take a couple days off if they didn’t mind.

It was only a two day prescription – I know it’s bad if you are on it for any length of time. But it did make Tony feel so much better – his knees didn’t hurt, he walked without having to hold onto the shopping cart.

There’s such a difference between our countries when it comes to medication. Prednisone is the biggest sh*t there is when it comes to medication and only prescribed when nothing else works anymore. My Dad got it when he got cancer and I understand that they gave it to Tony when he was so sick. But a girl in her twenties? Really? Is there nothing else that would have helped her?
That’s the difference: she would have never gotten it here, they would have prescribed something ligther.

We used to love the salads at Portillos. I liked the one with the honey mustard dressing? I can’t remember which one that was. The chocolate cake shake – now that was awesome 😀
We bought a chocolate Portillos cake for my step-sons high school graduation and it went in about 10 minutes – it was the equivalent of a dog seeing a squirrel!

I tried PB2 back in the day and didn’t like it. Looking forward to hearing if this stuff is any better – of course, not expecting it to taste just like peanut butter would probably help, haha.

Your dinners always look amazing!!! I buy that PB fit stuff too. I think it has a better flavor than PB2 and I use it in my smoothie every morning. This morning was a banana, spinach, chocolate protein powder and the PB flour. YUM!

The chicken fingers look so good. Do you think they would do as well baked? I really try to avoid fry foods. I know the power of prednisone. It gave me tons of energy, too much in fact. I couldn’t sleep. I also became all angry and assertive like the “hulk”. Hopefully Hannah isn’t on it for too long. Glad to hear everyone is doing better. Have a great weekend.
