Good morning! I have the day off from my day job today. I knew it was going to be a crazy busy weekend at the restaurant, so I decided to take the day off to spend it with Tony, otherwise I wouldn’t have seen him much at all today.
We are back to breakfast tacos! I actually think I am going to make a bunch of these over the weekend for just grab and go breakfast next week. Although I’ll use more egg white – I was totally out so these are two eggs, 3 slices of ham, baby spinach, an ounce of cheese and 3 ultra thin mission tortillas. I pan fried them in about 1/2 teaspoon coconut oil and Pam.
I had planned on swimming again, but the pool was so crowded for some reason. Homey don’t share swim lanes too well – I am a slow swimmer. So I ended up watching The Chew and biking 9 miles. This was at the end of my ride – I don’t like Anne Burrell – she’s kind of a condescending cook to me.
I ended up bringing the leftovers of the chicken and dumplings to work. I’ve had several blog readers make it and e-mail me that it turned out great for them – love it! I decided to try the convection microwave button (vs. the convection bake button) on our new microwave at work. I cooked this for 3 minutes.

It worked great! The chicken and veggies were nice and hot and the biscuit was again crunchy on top, but soft on the bottom. So good.
I had bay scallops in the freezer, so I decided to make a scallop/orzo dish for dinner. There is really no recipe for this. I thawed the bay scallops under water for a few minutes, separated them and squeezed them dry in a paper towel. Meanwhile I cooked the orzo – only takes 5 minutes to cook. While the orzo cooked, I pan fried the scallops in about a teaspoon of butter and a teaspoon of olive oil. Once I drained the orzo, I put it back into the pan, drizzled with about a teaspoon of extra light olive oil, a little butter, Parmesan cheese, salt, pepper, Italian seasoning, the squeeze from half a lemon and about a teaspoon of lemon zest – and for me – chopped fresh spinach.
With some crusty bread on the side – this came together in less than 20 minutes. #winning!
Tony and I usually don’t exchange gifts for V-Day, but I did find him this card – perfect for us!! Hahahaha!
And he bought me flowers and wrote a nice note. Tony has lots of nicknames for me – Bazey being one of them.
And I am happy to report that as of yesterday morning, I am a Great Aunt! My nephew and his wife welcomed baby boy Maddux! Just under 8 pounds. Unfortunately she was in labor for more than 36 hours before they decided to do a c-section. My SIL made it there just in time and will be spending the week there. They will go home from the hospital on Saturday, but all are healthy!
I do have some laundry to do, but other than that, we are going to take it easy today, go out to lunch and just hang out – sounds like the perfect Friday to me!

Late comment! At this point in my life, I refer to V-Day as “Single Awareness Day.” Maybe someday it will get back to being Valentine’s Day. Lol.

I don’t like Valentine’s Day and I don’t celebrate it. I think it’s too commercial. The original thought behind Valentine’s day is to send something to your secret lover. But economics has made this a celebration for all lovers: more $$$ to be made. VD is getting bigger here in Holland every year but I don’t play along with the game.
Cynical? Yes, about VD I am (but the same about Mother and Fathers day: more $$$ to be made by the stores).
Here’s Valentine’s Day in our house: I work all day and MAK works all night. He sends flowers to my office and I get him a card/candy. Boom. Done. Onto the next thing.

We celebrated with red velvet waffles this morning, a snow day off from work for me and tonight we are staying in to have make-your-own nachos and brownie sundaes 🙂

Oh yes, I am one of those that loved the Chicken and dumpling recipe. ‘Cept I changed up the vegies and used frozen California mix of broc-carrots-califlower. A very good go-to recipe. We are sort of stuck on vegie marinara sauce and lasagna soup. So the chicken and dumpling ricipe is a good change.
Have fun working tonight…you’ll probably makes lots of tips. We’ll not be going out…..I’m doing a cleansing, yesterday fruits, today vegies and tomorrow fruit and vegies. Plus 8pm excercise……..my goodness, I got on the scale this morning and 4 lbs dropped, I was surprised, must have been a lot of water weight which I carry around a lot of. I’ll take that. We’re going out to dinner…we considered cooking a fancy meal at home (as we have done some past years), but we’re both really stressed out with work stuff right now and decided it would be nice to let someone else cook (and clean up) this year. 🙂
Congratulations Great Aunt Biz! He’s a cutie. And Happy Valentine’s Day too! My husband and I don’t exchange gifts for any holiday. Instead we either go out to a nice dinner or plan a weekend away. We just so happen to be in Arizona for my cousin’s wedding. This is the first V day wedding I’ve been to. We are having a great time here so far and considering the weather we are going home to I may never leave! Have a great weeken!
We don’t really celebrate Valentine’s Day. I used to think of it as a holiday that puts too much pressure on people to find the right gift. But I told my husband, that I’d like to “sort of” celebrate it this year. Not in the sense of getting gifts or going out for dinner, but for expressing love.
Another way to do this, is to just do something for others. Pay it forward today, do something nice for someone, make someone’s day!
As much as we go out to eat, we never dine out on Valentine’s Day. It’s often overpriced, too busy/crowded and sometimes the menu is limited. But it’s great for people who hardly ever get out and want to do something special.
And Biz, being that you are working tonight, you have the power to help make every couple’s night special! 😉 Enjoy!

I never noticed until recently how many greeting cards have photos/cartoons of squirrels. Hope you two enjoy your day together. I have a feeling your Vday tips will be your best yet!
