Fideo Soup with Albondigas

Two weeks ago I saw an Instagram post of this soup called Sopita de Fideo con Albondigas and I haven’t been able to stop thinking about it and finally made it today.  So worth the wait! 

Unfortunately this creator didn’t give exact measurements to the soup, and even though hundreds of people asked in the comments “do you have a full recipe with ingredients and instructions?”  Those questions were unanswered.  So this recipe is what I was able to come up with.

This has everything you want in a soup: noodles, slightly spicy tomato broth with meatballs.  I will say that while I used ground beef that was lean so it would be less Weight Watchers points, if I made this again, I would definitely use a fuller fat beef.  That being said, this was still delicious.

Fideo Soup with Albondigas

I saw a video on Instagram and immediately saved it. Unfortunately the creator didn't put exact measurments, and hundres of comments asking for the specific recipe when unresponsive. Is this traditional? No idea! All I know is it's damn delicous.

Ingredients

  • For the Albondigas
  • 1 pound lean ground beef
  • 2 tablespoons minced onion
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 tablespoons fresh minced garlic
  • 1 teaspoon white pepper
  • ½ teaspoon salt
  • ½ teaspoon cumin
  • 1 egg
  • ½ cup chopped cilantro
  • For the Soup
  • 3 cups fideo
  • 15-ounce can tomato sauce
  • 1 chipotle pepper (in adobo)
  • 2 Roma tomatoes, chopped
  • 4 cups chicken broth
  • 1 tablespoon dried oregano
  • ½ teaspoon white pepper
  • 2 tablespoons minced onion
  • 1 cup cooked potatoes, diced
  • 1 cup hominy

Instructions

Albondigas

In a bowl, mix: 1 lb lean ground beef, 2 tbsp minced onion, 2 tsp onion powder,
2 tsp garlic powder, 2 tbsp fresh minced garlic, 1 tsp white pepper,
½ tsp salt, ½ tsp cumin, 1 egg, and ½ cup chopped cilantro.
Roll into small meatballs and set aside.

Soup Base

In a large pot, toast 3 cups fideo in a little oil for 5–7 minutes, until lightly browned.
In a blender, combine: 15 oz tomato sauce, 1 chipotle pepper, 2 chopped Roma tomatoes,
4 cups chicken broth, 1 tbsp dried oregano, ½ tsp white pepper,
2 tbsp minced onion. Blend until smooth.
Pour blended mixture over the toasted fideo. Add 1 cup cooked diced potatoes and 1 cup hominy.

Cook

Add the meatballs directly into the pot.
Simmer 7–10 minutes, or until the meatballs are cooked through and the fideo is tender.

Garnish with cilantro and sliced serrano peppers.

Notes

Without the fideo, this soup with albondigas is 0 WW points. With the fideo it's 6 WW points per serving. If you count calories or macros: each bowl is approximately 365 calories, 10 fat, 42 carbs, 4 fiber and 25 grams protein.
