This easy shrimp fried rice is a great way to sneak in some veggies!

My late husband made THE BEST fried rice.  You can check out this video of how he makes it here.  I watched this a couple times today – it made me smile. 

Sadly, my fried rice is nowhere near as good as he made it, but this is still really good.  Eating this fried rice is a sure fire way for me to get in vegetables.  Use any combination you like.  Today I used sugar snap peas, carrots and zucchini.

Can you make fried rice with frozen shrimp?

Absolutely!  In fact I encourage you to save money by doing so.  My local grocery store (love you Mariano’s!) every three weeks sells their frozen shrimp buy one bag, get one free.  Unless you live near a body of water that provides you with fresh (never frozen) seafood, the “fresh” shrimp you see at the grocery store has been defrosted for your convenience.  So it was frozen, and they just defrosted it for you, and usually charge more money per pound for that reason.

Simply place the 3 ounces of shrimp in a bowl with cold water.  Within 5 minutes, the shrimp will be defrosted enough to shell and devein, and I then chop into bite sized pieces.

Should you use cold rice for fried rice?

Yep!  The reason you need to use cold cooked rice is because it won’t clump up like warm rice would.  Not only will it clump together, but it gets mushy in the process of making the fried rice.  Simply make the morning of, or the day before you want to make fried rice.  I use a cheap rice cooker that I got from Walgreen’s of all places several years ago.  Here is a similar one at Bed Bath & Beyond – don’t forget to use your 20% off coupon!

Ingredients for shrimp fried rice

  • shrimp – again, buy frozen and save yourself some money!
  • veggies – two cups of your favorite vegetables.  I find that carrots, snap peas and zucchini cook at about the same time.
  • stir fry sauce – I buy House of Tsang Spicy Szechuan Sauce – it’s 1 WW point per tablespoon
  • soy sauce – confident my husband used way more than a tablespoon, but that’s plenty for me
  • avocado oil spray – to cook the shrimp and veggies.  My late husband also used A LOT of oil when he made his fried rice, which is probably why it tasted so good.

Easy Shrimp Fried Rice

Yield: 1 serving
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

I am not the best at getting in vegetables, but throw them in a fried rice and I am in!

Ingredients

  • 1 cup cooked white rice, cold
  • 3 ounces shrimp, peeled, deveined and roughly chopped
  • 1/2 cup carrots
  • 1/2 cup sugar snap peas
  • 1 cup zucchini
  • 1 large egg
  • 1 tablespoon stir fry sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon chili oil

Instructions

  1. Heat skillet with avocado oil spray over medium heat.
  2. Add shrimp and cook for 30 seconds, remove.
  3. Add in the veggies and cook for 4-5 minutes, or until crisp tender. Add in rice. Scooch the veggie/rice to the side and add the egg and scramble.
  4. Toss in the cooked shrimp and sauces and cook for 1-2 minutes, making sure the shrimp is fully cooked.
  5. Enjoy!
