I can eat soup 365 days a year.  My late husband never understood it.  

Soup was an appetizer at best for him, and one of his least favorite soups was tomato!

This quick tomato soup is so rich, delicious, health and ready with hardly any hands on time at all.

How to make quick tomato soup

Pasta sauce!

The best part of this quick tomato soup is that it can be the base for so many things.  Mix it with ground beef and cooked rice and make stuffed peppers.  Mix with ricotta cheese and use it as a layer in lasagna, or even make a quick lasagna soup.  

For the quick lasagna soup, first I used 1/2 a sausage link and took it out of the casing, rolled it into marble sized pieces and added to a skillet to brown.  Add in two cups of the tomato sauce after the meatballs have cooked about 5-6 minutes, and simmer for 5 more minutes.  Add in cooked pasta and baby spinach and sprinkle with mozzarella cheese and chopped parsley to finish.  It seems so indulgent but it’s really healthy and filling.

Quick Tomato Soup

Yield: 4
Prep Time: 5 minutes
Cook Time: 45 minutes
Total Time: 50 minutes

This is a quick tomato soup because it uses jarred pasta sauce - it only tastes as if it's been simmering all day!

Ingredients

  • 6 small tomatoes, quartered
  • 6 cloves garlic
  • 3 ounces tomato paste
  • 2 cups mid's pasta sauce
  • 4 cups chicken broth
  • 2 large carrots
  • 1/2 tsp ground pepper
  • 1/2 tsp crushed red pepper
  • 1 pinch salt

Instructions

  1. Put everything in a stock pot. Simmer over medium low heat for 45 minutes. Puree with a stick blender or carefully blend in a blender until smooth.
  2. Garnish the chopped parsley and shaved Parmesan, optional

For my WW peeps, I count this as a zero point soup.  It’s 106 calories for 1/4 of the pot, but if you want, you could count it as 2 points on all plans.
