These peanut oat bites with dark chocolate are so delicious – peanuts are packed with 19 vitamins!
They are the perfect heart healthy snack and these peanut oat bites with dark chocolate are the perfect #mealprep snack.
I use Lily’s sugar free dark chocolate chips – so good!
Peanut Oat Bites
Ingredients
- 1/2 cup oats
- 1 tbsp light butter melted
- 1/2 tsp cinnamon
- 2 tbsp sugar free caramel sauce
- 1 ounce peanuts
- 28 grams sugar free chocolate chips
- 1 tsp coconut oil melted
Instructions
- Melt the butter and mix in the oats and cinnamon. Divide the mixture into 6 mini muffin tins. Place 1 teaspoon caramel sauce in each muffin tin, divide the peanuts between each muffin tin and press down so it sticks to the caramel sauce. Freeze for one hour.
- Melt the chocolate chips and coconut oil. Remove the frozen snacks from the muffin tin. Dip each snack into the chocolate and place back in the freezer for 30 minutes. You can then store them in ziplock bag and grab one on the way to your walk or bike ride.

The best part about these snacks is that you can make a bunch at one time, and then freeze individually on a cookie sheet for 30 minutes before storing in a ziplock bag.
They are perfect straight out of the freezer, no need to thaw. The oats are chewy, you get that hint of caramel and then the delicious dark chocolate. #swoon
Don’t skip adding the coconut oil, that’s what helps the chocolate get solid when it freezes.
