Peanut Oat Bites

These are the perfect snack - sweet, salty and delicious!

Ingredients
  

  • 1/2 cup oats
  • 1 tbsp light butter melted
  • 1/2 tsp cinnamon
  • 2 tbsp sugar free caramel sauce
  • 1 ounce peanuts
  • 28 grams sugar free chocolate chips
  • 1 tsp coconut oil melted

Instructions
 

  • Melt the butter and mix in the oats and cinnamon. Divide the mixture into 6 mini muffin tins. Place 1 teaspoon caramel sauce in each muffin tin, divide the peanuts between each muffin tin and press down so it sticks to the caramel sauce. Freeze for one hour.
  • Melt the chocolate chips and coconut oil. Remove the frozen snacks from the muffin tin. Dip each snack into the chocolate and place back in the freezer for 30 minutes. You can then store them in ziplock bag and grab one on the way to your walk or bike ride.
