Low Carb Zucchini Beef Sliders 

These zucchini beef sliders were the result of coming home from vacation and having hardly anything in the fridge.  I found beef, zucchini, cheese and mustard – done!

Have you ever gotten to dinner and looked at your WW tracker and realize that you don’t have many points left?  The solution?  Use sliced zucchini as the top and bottom and make mini sliders.

Zucchini Beef Sliders

Yield: 1 serving
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

These mini zucchini sliders are perfect for an appetizer at a BBQ, or a light lunch or dinner.

Ingredients

  • 10 slices zucchini (approximately 1 medium zucchini
  • 4 ounces lean ground beef (96/4) shaped into 5 mini burgers
  • 1 tablespoon dijon mustard
  • 2 teaspoons Steak Seasoning (I used Grilling with Dad seasoning)
  • 2/3 ounce sharp cheddar

Instructions

Heat skillet or grill over medium heat. Spray with avocado oil spray. Season the zucchini with salt and pepper. Season the burgers with seasoning of choice.

Grill the zucchini for 6-7 minutes. Grill the burgers for 4-5 minutes, flipping halfway. Top the burgers with cheese, banana pepper and mustard. Sandwich between two zucchini slices and enjoy!

How do you make air fried steak fries?

To make the steak fries, as part of my weekly meal preparation, bake off two or three baked potatoes, let cool, and store in the fridge.  Heat your air fryer at 360 for five minutes.  Remember it’s a mini oven and needs to be preheated!

Simply slice each potatoes in 8 steak fries, spray with avocado oil spray, salt and pepper, and cook for 12 minutes at 400 degrees.

Do I do low carb?

No.  The above picture has been shared on possibly thousands of times since posted this in July 2019.  Sadly people assume my blog is low carb.  One woman even thanked me for giving her a low carb pizza dough – which is the skinny pizza dough and has two cups of flour.  Not sure how she thought it was low carb with all that flour?

However, being diabetic I don’t mind doing lower carb from meals now and again.
