I had overnight oats for the third time yesterday.  I am still so surprised how much I like it.  I never thought I’d like cold oats, but it’s so creamy delicious.

This batch I did 1/2 cup oats (regular) 1/2 cup unsweetened almond milk, 1 teaspoon chia seeds, and half a mashed banana.  The base is 5 points, and with the sprinkle of the Safe + Fair granola (2 points) this is a super filling breakfast.

My favorites: blueberry cinnamon granola, chocolate granola, sweet and salty kettle granola; the Remy Grahams – I love those so hard and the pea protein chips – all the flavors, except BBQ but I don’t like any BBQ chips – my daughter in law loved them.  And of the brownie mixes I love the red velvet the most. šŸ˜€

Yesterday I put a top on that I love, but thought it was too small, which it probably was, but I rocked it anyway!  You’re welcome for the bathroom selfie.  Um, just don’t tell Hannah I wore those pants – she says that I shouldn’t wear flared pants, but these are comfy – ha!

I had to work through lunch yesterday – I got a 15 minute break and went across the street to get some rice to go with my meatballs with curry sauce.  But it was already 1:30 – and the line for Panda Express was 20 deep, so I went to the cafeteria style place and got some potatoes and cauliflower and the last of some romaine for a pop of color.

That’s how I would plate it if I had company over.  Look at how fancy my lunch looked!  So tasty!  I got so many ideas about the sauce – I asked on my Instagram page what to do with that sauce because I literally want to eat it by the spoonful.  Someone said to use as a dipping sauce for Indian egg rolls – so I immediately thought of my chicken tikka masala as the filling with spinach and maybe paneer??  

I am really proud that all three of us ate everything in the fridge this week without going to the grocery store.  Um, let’s just say Hannah and Jacob’s dinner was a bit eclectic.  They had already finished by the time I got home.

Here is what I had to work with:  lo mein noodles, round steak, asparagus and mushrooms and a bag of kale salad.  Stirfry!

Round steak gets a bad rap, but it’s super cheap and super flavorful.  The trick with this recipe is to literally cook it no longer than 1 minute.  That’s all it needs.   And that’s everything but the bagel seasoning on top – I love the sesame seeds in it šŸ˜€

It’s going go be a busy weekend! I have lunch out today with my friend Morgan and Jenn, then dinner out tonight with my roommates.

Tomorrow my Mom and sister are finally going out to lunch for our birthday – that was two months ago – we just couldn’t find a weekend day that all three of us could meet.
