I love my chia pudding parfaits and because I usually make three cups at a time, it’s an awesome meal prep on the weekend.  I make it on Saturday or Sunday and its ready to use by Tuesday – the chia seeds get so puffy and delicious.  Just remember 3 tablespoons of chia seeds per one cup of liquid.

I used unsweetened almond milk, and yesterday I ate breakfast a little later than usual, so I only used 1/2 cup of the pudding (3), Greek yogurt, strawberries, blueberries, banana.  And topped with a tablespoon of sweet & salty kettle granola (1) – so good!

Um, not sure that mother nature has gotten the memo that it’s almost March, because it’s been cold as balls lately – and doesn’t look like it’s going to let up for more than a week.

Hannah’s birthday is March 7 and there were birthday parties where it was so warm that we had water balloons, and other times when I was shoveling 5 inches of snow.  So we walked Macy’s!  

Jenn got sushi while we were there, but I brought pork chops.  She said “you brought a pork chop for lunch?”  While beef and pork are a staple in my house, I don’t think my sister has cooked pork in her house for 10 years.  I cooked this before work (defrosted from my freezer the night before) and cooked it about 80%. Just two more minutes in the microwave at work, and it was perfect – juicy and tender.  I had 3 ounces of potatoes, canned green beans (that tasted like ass, so those quickly went into the garbage) and fruit.  Perfect!

On my train ride home, I always spend more than half of my hour train ride home answering questions from Instagram – usually it’s a pizza dough question, or another dish someone is making of mine for dinner, or last night, a follower Ashley who told me that a grocery store not ten minutes from my house had delicata squash.  WHAT?!  Delicata squash has such a short season – usually from the beginning of September until late November.  If you can find it in December, consider yourself lucky!

I love Heinen’s grocery store, just wish I could afford to shop there on a regular basis.  I managed to only spend $13 there, and bought all five delicata squashes, even if they cost me $5.50.

I decided to use the oven method of my delirings (recipe is in this link), but use my air fryer instead.   Um, that looks a steak house dinner at home if ever I saw one!  Not bad for a Wednesday dinner.

I am used to deep fryer, so I need to tweak the breading for the air fryer – and I think I should have dipped in flour, then egg, then bread crumbs, but these were crunchy!  But truth be told, the deep fried version is much better and I’ll spend the extra point for the oil with the remaining delicata squash.

Apparently Roman decided that he needed a snack.  Now before anyone jumps out and says that he’s suffocating, he had plenty of air, and literally had the bag on his head for all of about 5 seconds before I took it off.

The best part though?  He had two treats in his mouth when I took bag off!

We’ve made it to Thursday – whoop!  I hope to get a huge ass salad at lunch today – I have such a taste for one.  Since I took a pit stop at the grocery store last night, I didn’t make it to the gym last night, but I still had close to 13k steps.  I need to hit the gym up tonight – promise I’ll come back and tell you that I went to the gym – no, really!  Pinky swear!
